Peptonized Beef Broth.
Wipe well and chop half a pound of
I lean beef, add a cupful of water and
cook over gentle heat till it boils, stirring
all the while. Pour off the liquid, mash
the meat to a paste and add to the liquid.
Into a glass jar put one half of a powder
in a Fairchild peptonizing tube with onei

and shaae all together thoroughly. Set
aside in a warm place (115F) for three
hours, then boil rapidly, strain and seaj
son.
Beef Juice.
Select a thick slice of best round beef
and heat for a few seconds over a cleat
fire, in order t-o start the juices; then
cut the meat into tiny pieces and with a
i lemon squeezer press out the juice, sea1
son it with salt and serve in a small, thin
glass.
Clam Broth.
; Eight large clams?in the shell?one
cupful and a half of water; mash the
| clams well with a brush and put them
j with the water into a saucepan over thp
fire. As soon as the shells open the
broth is done, strain through a thin piece
of muslin and serve.
Oyster Juice.
Select fresh oysters, cut them into
pieces and heat a few minutes in their
juice; strain next through a muslin, being
careful that no sand passes through
tue* cloth; serve hot.
These juices should be diluted and, if
preferred, may be frozen.
Plain Beef Broth.
One pint and a half of cold water and
a pcund ami a half of lean beef.
Chop the meat and soak it two hours

surrounded by lukewarm water and cook
until it becomes a reddish brown, stirring
constantly. Remove from the Are,
strain and season; serve hot.
FRJIT AND NUT CARAMELS.
"Even a girl who hasn't the least idea
about cooking can make delicious and
unique caramels," says Woman's Home
Companion for February. "Take equal
portions of nut meats, figs and dales;
chop very fine, or, better still, pass
tnrough a meat grinder, mix together
thoroughly, and place in a square, shallow
baking tin; pack down tight and
even, using a rolling pin or the blade of
a broad knife. When packed, the layer
should be about three-fourths of an inch
thick. With a sharp knife cut into
squares the size of ordinary caramels.
The candy may now be easily lifted from
the pan, for the cubes are firm and solid.
Yvrap each in a square of oiled paper.
"These caramels may he varied by
using different kinds of nuts. Walnuts
and pecans are both favorites. A very
delicious and slightly more expensive
caramel is one formed of figs and Brazil
nuts alone, using about one-third of the
nut meats to two-thirds of the fruit."

A simple recipe that produces
one of the most relishable and
beautiful desserts is this one, for
NEAPOLITAN OR LAYER JELL-0.
Dissolve the contents of one package
Lemon Jell-O in one pint boiling water.
Pour a little more than half of it into a
square quart dish or mould and set away
to harden. Let the other half stand in a
cool place till it just begins to set, then
beat it until it is light and pour it into
the mould when the Jell-O already in it
is cold and hard. Next take a package
of Strawberry Jell-O and prepare and divide
in exactly the same way. When
half is too cool to melt Jell-O already in
the mould, pour it in, beating the rest
same as Lemon and adding it when
Jell-O in mould is hard.
