SANDWICHES.
The following recipes have been
tested:
Olive Sandwiches.?Stone and pound
to a paste two dozen large olives or
plmolns and blend into it a small cupful
of mayonnaise dressing. Butter thin
slices of graham or brown bread spread
with the tilling and form sandwiches.
As the sandwiches are made pile them
together compactly trim off the crust
with a sharp knife and cut into halves.
Nut Sandwiches.?Chop line English
walnuts add enough mayonnaise dressing
to make a paste and spread between
thin slices of wheat bread.
Baked Bean Sandwiches.?Mash a cupful
of baked beans, add a teaspoon t'ul of
(hopped parsely, a teaspoonlal of onion
juice and a little prepared mustard.
Season to taste with salt and white pepper.
Llutter white bread on the loaf, cut
into thin slices and spread with the filling.
Trim ofT the crusts and cut into
shapes.
Ginger and Nut Sandwiches.?Cut up
very fine one part of preserved ginger
to two parts of nuts, moisten with syrup
of the ginger or with thick cream and
spread between slices of white bread.
Dill and Ham Sandwiches.?Cut thin
slices of rye or graham bread, butter
evenly, and lay between them two thin
slices of lean ham and thin slices of
dill pickle cut the long way.
Ham Sandwiches.?Chop very fine
some lean cold ham, mix with a little
salad dressing or cream, season and
spread between slices of vhite bread

Cucumber Sandwiches.?Chop a cucumber
Hue, place In a cloth and squeeze
out all moisture, then mix it with mayonnaise
dressing and spread on a lettuce
leaf between buttered slices of bread.
Anchovy Sandwiches.?Rub the yolks
of hard-boiled eggs to a paste, moisten
with soft butter, and season with anchovy
essence. Spread mixture between
slices of bread thinly buttered.
Brown Bread Sandwiches.?Brown
bread to be used for sandwiches should
be steamed in a square tin or in one
pound bnking powder cans. Spread
with butter, cut thin and put between
the slices layers of chopped peanuts
