THE GOLDEN BULE.
Do we forgive and pray

By some ungracious word,
Oh ! can we pause and pray
With childlike faith, and say;
Lord bless our foes to-day ?
Redeemer of mankind
Thou’lt grant us grace, and give
Us strength, that we may live,
May suffer, and forgive.
Gold Cakk.—Same as al ove, only use
the yolks instead of the whites.
Tka Cakes.—One-half teacup butter
milk, two cups sugar, one cup butter, three
eggs, two-thirds teaspoon soda, one tea
spoon lemon extract.
Silver Cake.—Whites of eight eggs,
two cups sugar, one cup butter, one cup
sweet milk, four cups flour, two teaspoons
baking-powder, one teaspoon extract lemon
Pea Nut Candy.—One and one-half
cups sugar, half as much water as sugar,
two large spoons of molasses, one pint of
outs. Boil until it hardens, when dropped
in water.
Caramel Frosting.—Boil two minutes
one cup sugar, one-half cup milk, flavor
and beat to a cream. "When nearly cool,
spread over the cake, then spread on a layer
of melted chocolate.
Silver Cake.—The whites of eight
eggs, two cups sugar, half cup butter, throe
fourth tup of sweet mi'k, three cups flour
and two spoonfuls of royal baking powder.
Flavor with lemon.
A Good Cake.—Two eggs, one-half
cup of butter, two cups sugar, three cups
flour, one cup sweet milk, two teaspoons
of royal baking powder and one of lemon
extract. This is a nice tea cake.
Butter Scotch.—One cup molasses,
one cup sugar, one cup hot water. When
nearly done add piece butter the size of an
egg. Boil as long as possible without
foaming. Pour in buttered pans and
mark in squares.
Coffee Jelly.—One-half box of gel
atine dissolved in one-half cup cold water;
pour over this one pint of boiling coftee,
stir thoroughly, add one cup sugar; when
this is dissolved, pour over one-half cup
boiling water.
Light Bread.—Two cups sweet milk;
boil and cool down with water. One tea
spoon salt, one tablespoonful sugar, two
tablespoons meal, one-half teaspoon soda
Make it up when it rises, and put in one
half teacup butter-milk and a little soda.
Tea Cake.—Cream the yolks and
whites of two eggs with one cup of sugar;
when very light add one cup of thick sour
cream and a half-teaspoonful of soda de
solved in it, and stir lightly into it two
cups of sifted flour; flavor to taste, and
bake in a quick oven.
Snowflake Cake.—Make any kind of
layer cake; then beat the white of an egg
with enough powdered sugar to make it
about as thick as frosting j spread this on
each layer and on top of the cake, and then
sprinkle each layer with grated cocoanut,
and also the top of the cake. This is ex
cellent.
A Cheap Marble Cake.—One cup
sugar, one-half «up butter, two eggs, the
yolks and whites beaten separately, one
half cup milk, one and one-half cups of
flour, one and one-half teaspoons of royal
baking powder. Keep out the white of
one egg for icing. Add spices to one-half
ot the mixture.
Cocoanut Cake.—One cup sugar, half
cup butter, two eggs, half cup milk, two
cups flour, two teaspoons baking p- wder.
Bake in thin layers. For icing, beat
together the whites of two eggs and one
cup of powdered sugar. Spread a layer of
this on the cake, and strew it thickly with
grated and sugared cocoanut. Place an
other layer of cake on that, and proceed as
before. On top put only icing.
Salad Dressing.—One egg, two table
spoons sugar, one-hall cup vinegar, butter
size of half an egg, one teaspoon mustard,
one-half teaspoon salt. Mix mustard, salt,
sugar and vinegar, and pour on beaten eggs;
simmer all ten minutes, stirring all the
time. If all do not all like dressing, place
it in oil bottle and cup and let each mix
his own. It can be kept a month or
mors in a cool place. It is nice for all
o»ld maats.
Neapolitan Blanc Mange.—Heat one
pint milk, stir in two tablespoonfuls corn
starch dissolved in a little milk, two table
spoonsfuls sugar, letting it boil a few min
utes; add strawberry coloring. Set away
to coo). Heat another pint, and make the
same way using vanilla for flavoring, and
to a third piqt grated chocolate. When
cool put togethei in layers so when dipped
out there will be the three colors which
makes a very pretty dish served.
Croquettes.—Put two ounces of butter
and two tablespoonfuls of flour in a pan;
stir until thick, add one cup of cream, and
stir till the mixture is as thick as mush;
add salt, nutmeg and cayenne pepper.
Chop the white meat of a fowl, or a pound
of white fish very small, and pour into the
rest. Keep it on the fire a few minutes.
When cold cut in pieces and form into the
shape of cones. Cover with egg and bread
crumbs and fry brown in boiling lard.
Spanish Cream.—One quart milk, four
eggs, one-half box gelatine. Pour half the
milk on gelatine and let it stand an hour,
add the rest of the milk, and boil all to
gether. Separate the eggs, adding twelve
tablespoons sugar to the beaten yolks and
four to the whites. When the milk and
gelatine have boiled add the yolks. When
the cream is thick and smooth, take ofl the
fire and let it get quite cool, then add the
whites. Use vanilla, or a little wine gives
it a good flavor.
A Delicious Dish.—A pair of fowls—
those just grown are best—should be cut
up and fried in a saucepan, with butter
and a little lard. When brown remove
the pieces. Add two finely chopped onions
to same gravy and let them brown. Also
seed and peel eight or nine tomatoes, cut
them in slices and add to the fowls, also
half a green pepper finely chopped ; two
cups of hot water or beef-stock ; season and
let all boil slowly for half hour and serve
with plain boiled rice in a separate dish.
Snow, Ice and Thaw.—Put one-half
package of gelatine in a little cold water,
then pour over one pint of boiling water;
when cool add the juice of two lemons, and
a scant pint of sugar; when cold add the
whites of two eggs well beaten. Beat all
to a stiff froth, pour into moulds and let it
stand till next day. Make a soft custard
of one egg and the yolks of three, one cup
sugar and one pint milk. Beat up the
whites of the eggs with sugar, and put
over the top.
Cream Dressing for Salad Without
Gil. — Rubthe yolks of two hard boiled eggs
very fine with a Spoon; to these add
a desert-spoonful of mixed mustard ; blend
the two thoroughly, then stir in a table
spoonful of melted butter and half a cupful
ol thick cream with a little salt and cay
enne pepper and if desired a dash of an
chovor Worchestershire sauce. Last of
all add little by little vinegar enough to
make the whole a smooth, creamy mass,
and pour it on lettuce just before serving.
Stuffing’s for Fowls.—For roast
turkey, sausage meat mixed, half and half
with bread crumbs buttered and seasoned ;
boiled chestnuts, either whole or mashed ;
oysters chopped, or whole, minced with
bread crumbs seasoned with salt, pepper
and spice. For any kind of duck, celery
chopped thick through the bread stuffing,
or the bread well floured with celery
essence; this will give a canvas-back flavor
to common ducks; a little celery essence
can also be added to the basting gravy.
For any fowl, bread soaked in cold wa
ter and mixed with a large spoonful ot
melted butter and a little raw, chopped
pork, with some sweet herbs, salt and pep
per to taste; or potatoes boiled and mashed
with pepper, salt and butter; an egg in
either dressing is an improvement.
Fruit, or Black Cake.—One poun<
of dark brown sugar, one of flour, fourteei
ounces of butter, twelve eggs, two Jarg
spoonfuls of molasses, a wine glass anc
a-half cf good brandy, a tablespoonfu
each of ground cloves, ground mace, groum
allspice and cinnamon, two p -unds of seed
ed raisins, two pounds of currants, ami
half a pound of citron. Stir the sugar ano
butter together, then add the eggs, ihe
whites and yolks beaten separately to >
froth. Then the brandy, and then thi
flour which should be sifted, and add th«
molasses and spice. Stir the whole togeth
er tor about quarter of an hour, then adc.
the fruit gradually, a handful of each al
ternately. The currants should be thor
oughly cleaned, and the raisins put in the
sieve with the flour used for the cake;
shake the sieve so as to have most of th<
flour sift through. The flour which ad
heres to the raisins will prevent theii
sticking together and sinking to the bot
tom of the loaves when baking. If tin
loaves are thick, let them bake three hours
but do not have the oven at too greati
heat or the top will burn. This cake cuts
best when several weeks old and will keep
for months. Ice when cool.
