it. Garnish with parsley.
Herb Vinegar.
Herb vinegar adds so much to a
salad that it is astonishing that it is
not in general use. It may be made
of a single herb (preferably tarra
gon or chervil) or of a combination
of herbs, as thyme, savory, marjo
ram. sage, borage, chervil and tarra
gon. The leaves should be gathered
green, macerated and covered with
good cider vinegar. In four or five
weeks this will give a strong tinc
ture. which may be added to cider
vinegar for any degree of flavor de
sired. Sweet herbs, as above named,
may usually be had in any city mar-

ice Cream Cake.
CKRAM one cup of sugar with one
half cup of butter, add one half
cup of milk and one and three
fourth cups of flour sifted with two
level teaspoonfuls of baking pow
der. Beat well and fold in the beat
en whites of three eggs, and adu
one-half teaspoonful of vanilla. Bake
in two round tins or one biscuit tin
from twenty to thirty minutes. Frost
with the beaten whites of two eggs
thickened with confectioner’s sugar
and flavored with vanilla. This
same cake flavored with almond ex
tract and frosted with a boiled icing
containing one-half cup of chopped
blanched almonds, makes a delicious
almond cake.
Cinnamon Stars.
One pound of powdered sugar,
the whites of eight eggs, one ounce
of ground cinnamon, and one pound
of chopped almonds. Blanch and
chop the almonds; beat the whites
of the eggs to a stiff froth, add the
sugar, then the chopped almonds
and cinnamon. Roll the mixture
till it is thin, using a little flour if
It Is sticky; cut out the cakes with
a star-shaped cutter, and bake until
a light brown.
Beet Salad.
New beets make a delicious salad.
Boil the beets, and when tender peel
them: after they become cold, cut
into dice. To mayonnaise dressing
add a teaspoonful of minced onion,
a little minced parsley, an olive and
a cucumber pickle, and a little tar
ragon vinegar added to the dressing
Is an improvement. Pour the dress
ing over the diced beets, and serve.
Poached Eggs With Cream Sauce.
One pint of water, one tablespoon
ful of vinegar, one saltspoonful of
salt, and as many eggs as are re
quired. Put the water, vinegar and
salt into a frying pan, and when
boiling, slip the eggs carefully into
it, without. breaking the yolks. When
cooked as" preferred, remove from
the water with a skimmer and drain
thoroughly before placing on a warn
dish. Pour the water out of the
pan, and put in a teacupful of rich
milk—cream is better, if you have
it. Rub a teaspoonful of flour and
a tablespoonful of butter smoothly to
gether, and add to the milk; add a
little minced parsley, salt and a dash
of cayenne. Boil three minutes,
pour over the eggs, and serve at
once.
Snow Pudding.
Half a box of gelatine, two cups
of sugar, juice of two lemons, w’hltes
of three eggs, one quart of milk,
five eggs, and five tablespoonfuls
of sugar. For the snow, dissolve
the gelatine in half a pint of cold
water, let it stand two hours, then
add one-half pint of boiling water,
the lemon juice and the two cups of
sugar; strain and set away to cool.

Chocolate Ice-Cream.
One quart of cream, one coffee cup
of sugar, five eggs, a piece of stick
. cinnamon three inches long, three
1 ounces of sweet chocolate, and one
i tablespoonful of vanilla. Put the
• cream in a double boiler, add the
cinnamon, and let the cream get
scalding hot. Beat the yolks of the
■ eggs and the sugar together, beat
I the w’hites until stiff and add to the
. yolks; stir the eggs into the hot
‘ cream over the fire until it begins
- to thicken, remove from the fire and
■ strain, add the chocolate grated, stir
■ well, strain through a cheese-cloth,
, and set away to cool. Flavor with
- vanilla, then freeze.

Put into a mould and set on the
ice. For the custard, break the five
eggs into a dish, with five heaping
tablespoonfuls of white sugar, and
beat as light as possible; add the
quart of milk and pour the custard
into a double boiler. Stir slowly
one way till the custard is about as
thick as salad dressing. Take from
the fire and pour the custard into
a cold dish, or pitcher. Stir con
stantly to prevent it curdling. When
cold, flavor and set on ice. When
ready to serve, remove the pudding
from the mould to a glass dish and
pour the custard around it.
Creamed Celery.
Creamed celery is delicious. Pre
pare by cutting into inch pieces, then
cover with milk, to which, when
boiling, add salt and a small piece
of butter. Serve hot.
