Cheese Fondu
NE-HA LF teacup of grated cheese,
one-half teacup of bread crumbs,
two teacupfuls of sweet milk, four

eggs, one tablespoonful of butter, and a
little salt and pepper. Let milk come
to a boil, stir in cheese, bread crumbs,
blitter, pepper and salt; remove from
fire and let cool, then stir in eggs
beaten separately. Bake.
White Charlotte Russe.
To a half box of gelatine add one
cupful of cold water, and let stand
an hour or more, then put on fire to
dissolve. Sweeten one pint of solid
cream to taste, flavor with vanilla
,and whip till perfectly thick; to
this add the gelatine a little more
than milk warm, and mix thoroughly.
Lastly, add the well beaten whites
of four eggs, then pour in dishes to
congeal.
Hermits.
Six eggs, three cups of sugar, two
cups of butter, one cup of chopped
and seeded raisins, one cup of cur
rants, one teaspoonful each of all
kinds of spices, sweet milk enough
to dissolve a teaspoonful of soda,
and just enough flour to roll. Roll
thin, and cook quickly. Excellent.
Will keep for weeks, in tin box.
Strawberry Sherbet.
One quart of strawberries well
mashed, two and one-half pounds of
sugar, the juice of one lemon, and
two quarts of water. Freeze.
Egg Omelet.
To every egg use one tablespoon
ful of flour and milk. Beat eggs
separately; beat milk and flour to
gether, season with salt, then add
the eggs, and cook at once, serve
hot.
Lady Baltimore Cake.
One cup of butter, two cups of
sugar, three and one-half cups of
flour, one cup of sweet milk, whites
of six eggs, two level teaspoonfuls
of baking powder, and one teaspoon
ful of rosewater or bitter almond.
For the filling, dissolve three cups
of granulated sugar in one cup of
boiling water; cook until it threads,
then pour slowly over the whites of
three eggs. Add to this icing one
cup of chopped raisins, one cup of
chopped nuts, and five figs cut in
thin strips. Put between layers, and
emboss all over with mixture.
Transparent Custard.
One-half pound of butter and one
half pound of sugar croamed to
gether, the yolks of eight eggs beaten
well, and flavoring to taste. Bake
on crust. Cover with meringue made
of the whites of the eggs and sugar,
using a tablespoon of sugar to each
white.
Syrup Custard.
Seven eggs, one and one-half cups
of sugar, two and one-half cups of
syrup, two tablespoonfuls of butter,
and five tablespoonfuls of flour.
Flavor with ginger.
An Economical White Cake.
One-half cup of butter, two cups
of sugar, and one cup of warm water;
mix well together, then add two and
one-half cups of sifted flour, and
beat the mixture for five minutes.
Have the whites of five eggs stiffly
beaten, and to another half cup of
flour, add three level teaspoonfuls
of baking powder, sifting together
thoroughly. Flavor with one tea-

after these are added. Bake in three
, layers for twenty minutes. Put to
gether with whatever filling is pre-
• ferred —cocoanut makes a rich filling,
and is always pretty for white cake.
Tt is better after standing a day or
two. Though an economical recipe,
it has been called a perfect cake. One
who made these cakes for sale, baked
over one hundred each month; they
retailed at SI.OO each, and after de
ducting the grocer’s commission, she
cleared an average of $65.00 per
month.
Lemon Cheese Filling.
The yolks of three eggs, two tea
spoonfuls of corn starch, six spoon
fuls of sugar, the juice of tw’o lem
ons, and one tablespoonful of butler;
pour in one pint of boiling water,
and stir well until it thickens.
Bavarian Cream.
To one pint of cream add three
tablespoonfuls of sugar and flavor
ing to taste. Beat with syllabub
churn. Dissolve one spoonful of
gelatine in a little water, and pour
over cream after churning.
Boiled Custard.
To one quart of sweet milk add
four eggs, four tablespoonfuls of
sugar, and two teaspoonfuls of corn
starch, which should be rubbed
smooth with a little milk before add
ing. The eggs should be beaten
light, then beat in the sugar until it
is smooth, and add the cornstarch,
stirring all well together. Let the
milk come to boiling point, then pour
in the beaten eggs and sugar, stir
ring rapidly to prevent lumping. Let
boil,- and flavor as preferred.
Russian Cream.
One quart of new milk, four eggs,
one cup of sugar, and one-half box
of gelatine. Heat sugar and milk
to hoiling point, beat the yolks and
stir them in, then cook until it be
gins to curdle. Add the gelatine—
previously dissolved in little water—
and remove from fire. Add quickly
the beaten whites of the eggs, and
beat them in thoroughly. Pour in
molds, and when it is set enough to
retain them, push down into the
jelly, edgewise, several almonds.
Plum Pudding.
One dime loaf of bread, six spoon
fuls of sugar, one of butter, and three
eggs. One-half pound of raisins, one
piece of citron, one cup of currants,
spices to taste, and two teaspoonfills
of yeast powder. Pour one pint of
milk on bread crumbs and let soak
well, mix with other ingredients, and
boil three or four hours. Serve with
butter sauce.
Broiled Chicken.
To broil a chicken, it should be
rubbed over with butter, dusted with
salt and pepper, and broiled quickly;
then it should be put into the oven
and cooked a full half hour, basting
frequently with butter first, then the
bastings in the pan, covering it if it
browns too much. Chickens so
broiled will be neither dry nor
tough.
Baked Mackerel.
After two fish have been thorough
ly freshened by soaking in fresh
water six hours, rinse them and wipe
’ dry, then squeeze lemon juice over
; the flesh side. Place one of the fish
• on a fish tin laid in a baking pan,
■ cover with a thick dressing made of
, bread crumbs well seasoned with
i minced parsley, pepper, salt, bits of
i butter, and the thin yellow rind of
> a lemon; put the other fish on this
