Canning vs Orjlns Fruit.
One of the Substantial eharms of farm
life in iBis latitude, is the case with which
delicious fruits may be cultivated. Mod¬
ern ingenuity has devised a means, where¬
by these fruits may be preserved all the
year, retaining almost perfectly, their na¬
tural flavor. Of toursc we refer to the
limple and inexpensive proccs of canning.
And yet how few housekeepers avail
Ihemselvea of tho luxuries within their,
reach. A little tough and tnstolcs "dried
fruit,” usually unpealud, and not unfre*.
quently full of vermin—constitute the
winter stores from orchard and garden,
when with a little care, peaches, plums,
green peas, corn, tomatoes, and almost cv
ify other summer luxary, might grace
tho board the year round.
Fruit canning might be made also a
splendid source of income in every farm
bouse. Farmers’ wives toil week after
month at the spinning wlwe} and the
loom—taking time only to dry a few peach¬
es and apples in their season—and realiz¬
ing from tho toil of the year only a few
dollars. If; they would learn the simple
art of canning fruits and vegetables, they
might make ton-fold more, besides having
healthy and delicious vegetable dinners
ihe year round.
We do not oppse drying peaches and
bfpks. They arc very excellent, and the
revenuo derived from their sale may be
made very imbortant in a good fruit year.
But more revenue, with fair less labor
may be derived from canning. Even

simple household art. No fruit retains

atable, in winter and early spring, as tho

we copy the foilowing rcceipe, from John
Gain, Jr. of Foraytlie county, which we
find in the Marietta Journal. A lady of

This is the way I put up, and in about
100 cans and jars have not found ouc
spoiled. Have cherries, peaches and to¬
matoes of lust year now—for berries, Ac.,

any water.
Work the Soil— A root will dio

Deprive the soil entirely of air, and there
is no growth : light, air and warmth must
reach the plant. What do these reasons
show us? They teach us emphatically,
We must loosen tho soil. Tbit is one of
the secrets of trhe benefits from ploughing,
hoeing and digging. Wo open the soil to
admit the greni fountain ot light, heat and
fertility. The atmosphere is the great
source of growth. Then, by all means,
let us stir tho soil, unpack the clay, and
tho reward will come.
Useful Recipes, etc.
Almond Custards.—T aft a quarter
ctf a pound of almonds, blanch, and beat
them very fine, and then put them into
a pint of cream, with two spoonfuls of rose
water j sweetened to your taste. Beat up
the yolks of four eggs very fine, and put
them in j stir all together one way over
the fire till it is thick, and then pour it
out into cups.
Tho Main Farmer recommends giving
pigs good rock salt twice a week in their
ftod.
Sixteen pounds of grease and lye from
otic barrel of ashes will make a barrel of
soup.
Dry copperas strewed about ant nests
will induce them to leave and not return.
So says one who has tried it,
Tho chirrup of the cricket is a sign of
fair weather, but the cry of the tree-toad
indicates rain.

There are houses in gome country towns
painted so long ago that the memory of
man runneth not to the contrary, and they
look fresh to this day.
To keep bugs from melons, pump¬
kins ' and cucumber vines, mix flour
of sulphur and fine coal dust together,
sprinkle the vines with water, and dost
them with this mixture. It is death to
all bugs.
Make your land as rich as possible,
and then when the weeds show themselves,
apply the following compound, viz:—
Brains all you have to spare; muscle all
you can muster. This method is not pat¬
ented.
'■ An ordinary hot bed is a capital place
to dry fruit. A floor is laid inside on
which to place the fruit. Then put
on the sash, but be sure to raise
both the upper and lower ends about two
inches, to admit a free circulation of air,
or the fruit will bake as it would in an
oven. Here the fruit will not be wet in
a shower, nor will it be troubled with
insect, which will be kept away by
the covering and the intenso heat.—
Par-boiled green corn has been sufficient¬
ly dried in one day, in this way.
Sow ten bushels per acre of wood ash¬
es on your wheat field at the time of sow*
ing the scod. Scarcely anything would
bo better. Scatter by band, broadcast.
An English firmer by picking over his
seed wheat with the utmost care, and
planting a grain in a place, at intervals of
a foot each way produced 102 bushels to
the acre.
