I’ll admit that at first sushi looks a little questionable. My first taste was of a California roll and I was immediately hooked! I recommend getting your feet wet with a California roll. It is the most Americanized of the sushi. As a matter of fact, most people in Japan have never heard of a California roll. It’s prepared “inside out” with the rice on the outside instead of the nori (dried seaweed) in an effort (I think) to make the roll look more appealing. Americans are more familiar with the look of rice. Inside the roll is avocado, cucumber, crab meat, and mayonnaise. Once I realized I liked the California roll, there was no stopping me. If I’m at a Japanese restaurant, I prefer to order rolls. Most places have a plate that is served with a variety of rools so you can sample and figure out what you like. I’ve noticed that most Japanese restaurants that specialize in sushi will tailor a specific roll to the city or town, i.e. the Perry roll, which I assume denotes that that particular roll has been more popular with the people of the area. More recently, I have branched out to the raw sushi. Each piece of raw fish is laid over sticky rice with a tiny bit of wasabi in between. I like the pieces with salmon or tuna. I have not yet developed a taste for the firmer, almost rubbery texture of pieces like octopus. For those of you who are totally confused by a sushi menu, www.eatsushi.com has a glossary that will decode all those Japanese words. Tuna and salmon may sound unin viting when called Akami or Ikura, as peo ple tend to be turned off by the unknown. I am not a sushi expert, but some places I enjoy to eat sushi are Sushi Thai on Watson Boulevard in Warner Robins and Sho Gun on Burrus Road in Macon. I also like to buy California rolls from Publix, but elements in your body. Sushi is fairly easy to make, but you do need a few supplies, most of which people do not have lying around the house: Bamboo sushi-roll mat Cutting Board Sushi knife/very sharp knife Roasted seaweed (Nori) Wood spoon or wood or plastic rice paddle Plastic wrap CALIFORNIA ROLL RECIPE: Ingredients: 4 sheets dried seaweed (nori) 4 cups sushi rice 1 avocado 1/2 lb. imitation crab 1 tablespoons mayonnaise 1/2 tsp salt 2 teaspoons sesame seeds How to Cook: 1. Peel an avocado and cut it into strips or mash it. 2. Put imitation crab in a bowl and mix with salt and mayonnaise. 3. Cover a bamboo mat with plastic wrap. 4. Put a sheet of dried seaweed on top of the mat. 5. Spread sushi rice on top of the seaweed and press firmly. 6. Sprinkle sesame seeds over the sushi rice. 7. Turn the sushi layer over so that the seaweed is on top. 8. Place avocado and crab lengthwise on the seaweed. 9. Roll the bamboo mat forward, pressing the ingredients inside the cylinder-shaped sushi. 10. Press firmly the bamboo mat with hands, then remove the rolled sushi. 11. Cut the sushi roll into bite-sized pieces. absorb iron.
