Sensational sides make the meal
From staff reports
If you want variety, one
good meal-planning option
is to keep the meat simple
and serve a memorable side
dish. These recipes also will
go well for pot luck dinners
when you’ve promised to
bring a vegetable.
Twice Baked
Yams
Here’s a show piece from
the Louisiana Sweet Potato
Council. Try it with braised
pork chops or a simple roast
ed chicken.
3 lbs. small sweet pota
toes, unpeeled
1/2 cup golden raisins
1 tbsp. light brown
sugar
1/4 tsp. ground cinna
mon
1 (8 oz.) can crushed
pineapple, drained
1 teaspoon vanilla
extract
2 tablespoon chopped
pecans
1 cup miniature marsh
mallows
Preheat oven to 400
degrees. Place potatoes on a
baking sheet and cook for 1
hour or until tender. Cool for
15 minutes.

1 each mini Brie wheel
(8 oz. wt)
1 cup California seed
less grapes, rinsed
1 teaspoon thyme, fresh
minced
1/2 teaspoon rosemary,
fresh minced
1 sheet (10”
square) puff pastry,
thawed
1 egg, beaten

stir in raisins, brown sugar,
cinnamon, pineapple and
vanilla. Spoon mixture into
the shells and sprinkle with
pecans and marshmallows.
Bake at 350 degrees for 15
minutes or until thoroughly
heated. Makes 8 servings.
Buckeye Baked
Potato
This is an “ultimate”
baked potato, fully-loaded
with bacon, cheese, sour
cream and onions. Perfect
with roast beef or steak ,
it’s from the Idaho Potato
Commission.
4 Idaho potatoes (10 to
11 oz. each)
1/2 cup crumbled blue
cheese
2/3 cup Monterey Jack
cheese, shredded
1/3 cup heavy cream
1/4 cup sour cream
3 tablespoon bacon,
cooked and crumbled (3
to 4 slices)
2 tablespoon butter,
softened
2 tablespoon green
onions, thinly sliced
1/8 teaspoon ground
nutmeg
1/4 to 1/2 teaspoon salt
Heat oven to 425 degrees.
Pierce tops of potatoes with
fork several times. (Do not
cheese. Sprinkle grapes with
herbs.
Press top of Brie onto
grapes, sandwiching them
in between the two halves of
Brie. Set aside.
On lightly floured sur
face, roll puff pastry into a
16”xl0’ rectangle. Cut a 6”
round, and an 8” round from
puff pastry. Brush smaller
round of puff pastry with
egg.
Set Brie/grape “sandwich”
onto puff pastry. Brush larg
er round of puff pastry with
egg, and place egg side down
over Brie. Press out any
excess air and crimp edges
to seal.
Decorate top with puff pas
try scraps if desired. Brush
outside of Brie with beaten
egg. Place on cookie sheet
and bake for 20 minutes.
Tent loosely with foil and
return to oven for 10-15

Bake potatoes on oven rack
60 to 70 minutes or until
tender when pierced.
Meanwhile, in large bowl,
combine all remaining ingre

teaspoon, scoop out center

Add potato centers to cheese
mixture.
Using fork, break up
potatoes and mix until well
blended. Spoon mixture into
potato shells.
Transfer to baking sheet.
Position potatoes under
broiler so that tops are 5
inches from heat source.
Broil 4 to 6 minutes or until
tops are golden brown. Turn
off heat; close oven door and
leave potatoes in oven for an
additional 7 to 10 minutes.

From Betty Crocker, this
dish with red bell pepper, ripe
olives and canned chopped
chilies lends a Southwest
flair to any meal. Try it with
meatloaf.

1/4 cup sliced ripe

chicken broth

2 eggs, slightly beaten
2 teaspoons vanilla

Try keeping the meat simple and serving a very special side dish. We’ve got recipes for
sweet potatoes, white potatoes, pasta and hominy.
chili paste with garlic
1/4 cup soy sauce
1 tablespoon peanut or
vegetable oil
6 cloves garlic, minced
3 tablespoons fresh gin
ger, minced
1 1/2 pounds ground
chicken breast
1 1/2 cups halved
green California seedless
grapes
3/4 cup green onions,
thinly sliced
1/4 cup cilantro, coarse
ly chopped
1 head iceberg lettuce,
cut in half and separated
into leaves
1 1/4 cups julienne
cucumber
In small bowl combine
cornstarch and water. Add
chicken broth, sugar, vin
egar, chili paste and soy
sauce. Set aside. Heat oil

leaves; garnish with cilantro

Serve immediately.

Use a sharp knife to
loosen cake from sides of
the pan without removing
the sides.
Cool.
Remove sides of spring
form pan. Refrigerate
overnight or at least sev
eral hours. Cut into serv
ings.
Mix lemon juice with
cherry pie filling and
spoon lightly on slices.
Strawberries make a nice
topping, too.
