Mediterranean Fish Over Potatoes
1 tablespoon Pompeian Extra-Virgin Olive Oil
2 cups Simply Potatoes Homestyle Sliced Potatoes
1/3 cup water
6 Lindsay Whole Kalamata Olives
1/4 teaspoon salt
1/8 teaspoon pepper
11/2 pounds Publix Farm-Raised Tilapia Fillets
1 lemon (rinsed)
1 (14.5-ounce) can Del Monte Organic Diced Tomatoes
With Basil, Garlic, and Oregano
1/4 cup crumbled tomato/basil feta cheese
1 Place oil in large saute pan; swirl to coat. Add potatoes
and water. Cover and cook on medium-high 5-6 minutes,
stirring occasionally, or until potatoes are tender and

Mediterranean Fish Over Potatoes
and Pears Anglaise

water is absorbed. Meanwhile, remove pits from olives;
chop olives coarsely.
2 Reduce heat to medium. Arrange potatoes evenly into
a single layer; sprinkle with olives, salt, and pepper. Place
fish (darker side up) on potatoes. Squeeze juice of one-half
lemon (1 tablespoon) over fish.
3 Drain tomatoes very thoroughly (press or squeeze tightly
to remove as much liquid as possible). Spread tomatoes
over fish and sprinkle with feta cheese. Cover and cook
4-6 minutes, without turning or stirring, until fish is opaque
and flakes easily with a fork.
4 Reduce heat to low; remove cover and cook 1-2 minutes
to allow any extra liquid to evaporate. Serve.
