Massachusetts, home of Boston and Boston baked beans

Massachusetts is a state
with much to offer, from the
beautiful scenery of Cape
Cod on the east to gently
rolling Taconic Mountains
on the west, from world
reknowned universities, col
leges, symphonies and muse
um, to picturesque farms.
And, of course, there’s the
great city of Boston, which is
steeped in American history.
So what food have
we chosen to represent
Massachusetts?
It could have been a pot of

When it comes to baking,
muffins are just plain easy
to make. There’s no yeast
to dissolve, no rolling and
cutting. You don’t have to
drag out the mixer, either,
because muffin batter usu
ally just needs mixing lightly
with a fork.
Here are some exceptional
recipes to try the next time
you want to prepare some
thing special for your fami
ly’s breakfast.
One tip: We don’t recom
mend using cupcake papers
for muffins. Baking spray
or a little shortening on a
paper towel will work fine,
and peeling the paper off a
muffin usually results in los
ing some muffin!

If you’ve never made
baked beans “from scratch,”
you’re in for a treat, because
they wind up with a rich
flavor and a crusty, sugary
surface.
You can serve them with
traditional brown bread
(Still available in canned
form) but either dark rye or
cornbread muffins will do
nicely. Cole slaw makes a
good side dish.

3 tbsp. vegetable oil

taste.
Discard any discolored
degrees. In a bowl, combine
bran, flour, sugar, cinnamon,
baking powder, baking soda,
salt, and apples. Add sweet
potatoes, egg, egg whites, oil,
and yogurt. Stir all ingredi
ents thoroughly. Spray muf
fin tins with vegetable cook
ing spray and spoon 1/4 cup
of batter per muffin. Bake
for 20-25 minutes or until
done. Makes approximately
20 muffins.
