HOUSTON DAILY JOURNAL Don’t underestimate the carrot Carrots are such a beautiful and won derful vegetable. I think that they do not get the attention they deserve. They are good for snacks with dips, as part of a main meal, and in great desserts. They even make a nice table arrangement. We always grew carrots in our garden and mamma would put them in soups or cook them in butter and sugar, which she called can died carrots. Carrots are no longer a summertime vegetable because they are available year round in the stores and are not very expensive. They are also very good for us. Next time you are shop ping, pick up a big bag of beautiful carrots and have some fun in the kitchen. Carrot Salad 5 to 6 carrots 1/2 to 3/4 cup raisins 2 tablespoons sugar 1/2 cup salad dressing Clean and scrape the car rots and grate them. Add raisins, sugar and salad dressing. Mis well and serve. Crushed pineapple may be added as desired. Marinated Carrots 2 1-lb. cans sliced car rots, drained 1 small green pepper, chopped 1 onion, chopped 1 10 1/4-oz. can tomato soup 1/2 cup salad oil 1 cup sugar 1/4 cup white vinegar 1 teaspoon prepared mustard 1 teaspoon Worcestershire sauce Salt and pepper to taste Combine all ingredients in order listed in a large bowl Stir to mix. Refrigerate overnight and serve cold. Saucy Carrots with Water Chestnuts 1 lb. carrots Now is the time to prepare for holidays Can’t you smell the cinnamon and ginger now? Holidays are so exciting and it’s time to prepare for November and December festivities now. Begin by giving the fol lowing recipes a trial run before your magnificent holiday meals. Pecan Topped Pumpkin Pie 3 eggs 1 1/2 cusp cooked or caned pumpkin (I used canned) Sp- ■ ' j 1/2 cup brown sugar, packed 1/2 cup granulat ed sugar 1/2 tea spoon salt 1 1/2 teaspoon cinna mon Faye Jones Magic from the Kitchen 1/2 teaspoon ginger 1/2 teaspoon nutmeg 1 teaspoon vanilla Pinch of cloves (optional) 1 1/2 cps evaporated milk Set oven at 450 degrees to preheat. Beat eggs in mixer on high speed for about one minute. Add remaining ingredi ents and beat on medium until well blended, scraping down mixture from sides. Pour into an unbaked, deep dish, 9-inch pie shell. Bake at 450 degrees for 10 minutes. Reduce heat to 350 and continue bak ing for approximately 40 minutes. In the meantime, melt two tablespoons butter and 1 tablespoon brown sugar and add 3/4 cup finely chopped pecans and 1/2 tea spoon vanilla. Spread over pie about 20 minutes before baking time is up. 2 tablespoons butter or margarine 1 8-oz. can sliced water chestnuts, drained 1/4 teaspoon dried thyme, crushed 1/4 teaspoon ground gin ger 3 tablespoons dry white wine 1 tablespoon snipped parsley Slice carrots diagonally, 1/2-inch thick. Cool in boil ing salted water for 15 to 20 minutes until tender-crisp. Jean Rea Cooking with Jean Cook for two minutes, stir ring. Add wine, parsley and carrots. Cook until heated through. Carrot Croquettes 2 cups mashed cooked carrots 1 tablespoon melted butter 1 egg yolk beaten 1/2 teaspoon salt Dash of nutmeg Fine bread or cracker crumbs Combine carrots, butter, egg yolk, salt and nutmeg. Mix well. Form into car rot-shaped pyramids. Roll in crumbs. Chill for two hours. Fry in deep hot oil for 3 to 6 minutes or until browned. Carrot Pudding 2 cups mashed cooked carrots 1 teaspoon salt 1/2 cup sugar 1/2 stick margarine, soften 1 cup milk 3 eggs, well beaten 2 heaping teaspoons Oatmeal Drop Cookies (This recipe is more than 50 years old- it still works for me.) 2 cups all-purpose flour 1 teaspoon soda 1 teaspoon salt 1 1/2 teaspoon cinna mon 2 cups quick-cooking oatmeal 1 cup soft shortening, butter or margarine (use 3/4 cup for soft cookies) 1/2 cup granulated sugar 3/4 cup brown sugar, firmly packed 2 eggs, unbeaten 1 1/2 teaspoon vanilla 1/3 cup milk or but termilk 1 cup raisins, chopped dates or chocolate chips 3/4 cup chopped nuts, Serving Daily Breakfast • Lunch • Dinner Our very own Southern belle; Miss Belinda Evans, her love for people and food, are once again at the New Perry Hotel 800 Carroll St. - Perry, GA (478) 987-1073 flour 1 teaspoon baking powder 1/4 teaspoon cinna mon 1/2 cup chopped pecans Combine all ingredients. Mix well. Pour into greased 1 l/2quart casserole. Bake at 350 degrees for about one hour. Applesauce Carrot Cake 2 1/4 cups flour 3 teaspoons soda 1 teaspoon salt 3 teaspoon cinnamon 1 teaspoon nutmeg 4 eggs, beaten 1/4 cup oil 2 cups sugar 1 1/2 teaspoon vanilla extract 1 15-oz.. jar applesauce 3 cups shredded car rots 1 cup golden raisins 1 cup chopped wal nuts 4 oz. cream cheese, softened 2 tablespoons butter or margarine, softened 1/4 cup confectioners sugar Mix flour, soda, salt, cin namon and nutmeg in large mixing bowl. Set aside. Combine eggs, oil, sugar and one teaspoon vanilla in large bowl. Mix well. Add applesauce and car rots and mix well. Add applesauce-carrot mixture to flour mixture, stirring just to moisten. Fold in raisins and 1/2 of the walnuts. Pour into greased and floured 9 xl3 inch pan .Sprinkle with remain ing walnuts. Bake at 350 degrees for 45 minutes. Cool. Combine cream cheese butter and 1/2 teaspoon vanilla in small mixer bowl. Beat on medium speed of electric mixer until smooth. Add confectioners sugar gradually beating until fluffy. Spread on cooled cake. Drain and set aside. Melt butter in sauce pan. Add water chest nuts, thyme and gin ger, mix ing well. if desired Set oven to 375 degrees. Sift together flour, soda, salt and cinnamon together. Add oatmeal. Combine butter, sugars, eggs, vanilla in a large mix ing bowl. Cream with electric mixer for two minutes. Stop mixer and add milk, then flour mixture gradu ally while beating on low sped. Add raisins and nuts, beat on Number 4 speed for 1 1/2 minutes, scraping sides of bowl, drop by teaspoonfuls on greased cookie sheet. Bake about 12 minutes or until browned. Makes five dozen. Note: For Orange Oaties: Omit cinnamon. Add one teaspoon grated orange rind. Use orange juice in place of milk.
