cancer awareness

holding a “pink tag” cam
paign throughout October.
Look for pink tags on partic

Recipe for easy peanut butter and jelly bread pudding

CONCORD, N.H. - What
do you do with the crusts
from nearly two dozen pea
nut butter and jelly sand
wiches?
As my wife and I learned
following a party for 20 tod
dlers for whom we dutifully
removed the crusts from
as many sandwiches, not
much.
I refrigerated the rem
nants, but not even my
voracious 2-year-old could
pack them in before they
went stale.
Which got me thinking.
I’d been trying without
much luck for about a year
to make a good bread pud
ding, which essentially is a
heap of stale bread tossed
with beaten eggs, spices and
sugar, then baked to a cake
like consistency.
Most of mine were com
ing out gummy, or had little
flavor.
I’d been aiming for some
thing reminiscent of French
toast, a little crispy, a little
tender, moderate sweet
ness, and maybe just a little
something unexpected on
the tongue. It wasn’t work
on these
cans to
support
breast
cancer
aware
ness.
Nearly

Rather than follow the
typical plan of organiz
ing their wines by country
of origin or grape variety,
Winestyles puts wine into
eight categories, with typical
characteristics and general
ized pairings for each.
Instead of saying, I think I
want a Merlot with this par
ticular dish, but I want it to
be one that is full bodied and
able to stand up to the fla
mix pineapple, cherries and
pecans with remaining flour.
Pour mixture over non-fruit
mixture and mix well. Pour
into foil lined pan. Put cake
in cold oven. Set tempera
ture a 300 degrees and bake
30 minutes. Reduce temper
ature to 250 degrees and
bake 2 hours and 30 minutes
longer. Makes one 5-pound
cake.
1 tablespoon grated
onion
2 teaspoons fresh lemon
juice
1 1/2 cup mayonnaise
1 can water chestnuts,
chopped
1 cup shredded cheese
1 8” pie shell
Mix all ingredients. Pour
in pie shell. Bake 30 min
utes at 375 degrees. Sprinkle
cheese on top.

But those crusts gave me
an idea: What if instead
of stale bread, the base of
the pudding was chopped
up peanut butter and jelly
sandwiches?
I suddenly had visions of
warm, gooey peanut butter
inside bread that was at
once cakey and eggy and
crispy.
And drizzled with maple
syrup.
Or dusted with powdered
sugar. Or both.
I started by making some
new sandwiches. I cut each
into 16 bite-size pieces and
piled them into a shallow
baking dish. I then topped
those with a simple mix of
milk, eggs and pumpkin pie
spices and popped it in the
oven.
To finish it, I scattered
the pudding with sugar,
then broiled it for just a
minute to a crisp the top
and caramelize the sugar.
For variety, you also could
sprinkle dried fruit or choc
olate chips into the pud
ding.
It was delicious.
The peanut butter and
jam melted into the bread,
vors the meal presents, you
could just choose a bottle
from the “bold” section. On
the other hand, the person
who wants a smoother, easy
drinking Merlot to pair with
a lighter dish may go for the
“fruity” or “mellow” selec
tions. Now, I realize that I
have probably lost all the
snobs who may have been
reading at this point. “Too
general,” they say, “and far
too simplistic.”

6 lean pork chops
1 tablespoon fat
1 1/2 cups rice
1 can consomme
1 consomme can water
Salt and pepper to
taste
1 large onion sliced in
1 can French style
beans, drained
1 can celery soup
1/2 cup shredded sharp
cheese
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped bell
pepper
1/2 cup sour cream
Cook raw vegetables in a
small amount of water until
tender. Combine with the
above.
Topping:
1/2 box cheese crack
ers, crushed
1/2 stick melted mar
garine
1/2 slivered almonds
Don’t mix. Put on top.
Melt a tablespoon of butter
and put over almonds. Cook
until bubbly, about 20 min
utes at 350 degrees.

Peanut Butter
and Jelly Bread
Pudding
(Start to finish 40 min
utes)
Cooking spray
8 slices whole wheat
sandwich bread
1/2 cup smooth peanut
butter
1/4 cup fruit jam or
jelly
1/2 cup chocolate chips,
raisins or dried cherries
(optional)
5 eggs
2 cups milk
1/2 teaspoon pumpkin
pie spice (cinnamon can
be substituted)
2 tablespoons sugar
Maple syrup, to serve
Preheat oven to 400 F.
Lightly coat a 9x9-inch bak
ing pan with cooking spray.
But that’s the very idea. If
you know what you like and
what kind of meal you are
making or serving, you have
a variety of choices already
laid out for you.
Most of the wines in the
stores are between $lO and
$25, so you don’t have to
spend a fortune to get what
you need to make your meal
a success. Other categories
include: Crisp, Silky, Rich,
Bubbly, and Nectar.

Using the bread, peanut
butter and jam, make four
sandwiches.
Cut each into quarters,
then cut each quarter into
four more pieces. Arrange
the pieces in the baking
pan.
They should be slightly
jumbled.
If using, scatter the choc
olate chips or dried fruit
among the sandwich pieces.
In a medium bowl, whisk
together the eggs, milk and
pumpkin pie spices. Pour
the egg mixture over the
sandwich quarters.
Press the bread gently
with a fork to help it absorb
the liquid.
Bake for 20 to 25 minutes,
or until egg is nearly set.
Remove the pan from the
oven and scatter the top of
the pudding with the sugar.
Increase the oven to broil
and cook until the sugar
on top begins to caramelize,
about 1 minute.
Watch it closely to pre
vent burning. Serve drizzled
with maple syrup. Makes 4
to 6 servings.
