Houston County Environmental Health inspectors visited the following food service estab
lishments between Nov. 13-17. Major problems are corrected before the health inspector
leaves the premises. A rating of 90-100 in considered excellent, 80-89 is good, 70-79 is sat
isfactory.

Call some friends and hake some cookies

lowship, love and parties.
There are things that money
doesn’t buy and they make
lasting memories.
Get some friends together
for a cookie swap. Make a
list and a few phone calls
and ask each one to bring
a dozen cookies, bagged for
each person coming.
Make some punch, put on
the coffee pot and enjoy.
My annual open house is
Dec. 8, 2- 4 p.m., and Dec. 9,
10 a.m. - 4 p.m. There will
be food to eat, food to buy
and good fellowship.

Cookies
1 1/2 cups butter
1 cup sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
1/2 teaspoon almond
extract
4 cups all-purpose
flour
1 teaspoon baking pow
der
Preheat oven to 400
degrees. Thoroughly cream
butter and sugar. Add egg,
milk, vanilla and almond
extract. Beat well. Stir
together flour and baking
powder. Gradually add to
creamed mixture, mixing to

Danish Jam
Cookies
1 cup margarine or
utter
1/2 cup sugar
1/2 cup light or dark
corn syrup
2 eggs, separated
2 1/2 cups unsifted
flour
2 cups finely chopped
walnuts
Tart jam or jelly
In large bowl with mixer at
medium speed beat marga
rine and sugar until smooth.
Beat in corn syrup and egg
yolks. Stir in flour. Chill

one hour. Shake into one
inch balls. Dip into slightly
beaten egg white. Roll in
nuts. Place 2 inches apart on
greased cookie sheet. With
thumb make indentation in
center of each. Bake in 325
degree oven for 20 minutes
or until golden brown. If
necessary, press again with
thumb. Remove from cookie
sheet. Place on rack. While
still warm, fill indentations
with jam. Cool.
Orange Date
Cookies
3/4 cup vegetable short
ening
1/4 cup butter or mar
garine
1 1/2 cup brown sugar
2 eggs, beaten
1/4 cup orange juice
1 tablespoon grated
fresh orange peel
1 teaspoon vanilla
1 cup sour milk
3 1/2 cups all-purpose
flour
2 teaspoons baking
powder
1 teaspoon soda
1/4 teaspoon salt
1 cup chopped dates
1 cup chopped pecans
Orange glaze
Cream together shorten
ing, butter and sugar. Beat
in eggs, juice, peel, vanil
la and sour milk. Sift dry
ingredients together. Add to
creamed mixture.

So you ate all that dressing
The holidays do pres
ent some challenges,
don’t they?
I thought my willpow
er might stand up to the
challenge of our “second
Thanksgiving” on Saturday
until I tried Yvonne’s home
made bread. (Yvonne is my
sister-in-law, and a wonder
ful cook.) Then I had to try
the dressing, and what’s
dressing without gravy?
Then there was the choco
late decadence cake which
tasted sort of like fudge
and sort of like brownies.
Yummm.
Long story short? I broke
every rule of my diet.
Chapter two of that story:
I was back on my diet the
next day. I didn’t decide I
had to starve for a day or
two as penance or that I
should walk five miles. I
