HOUSTON DAILY JOURNAL ZING From page tC fresh or frozen turkey, thawed I lemon Start by making glaze. Combine cranberry sauce and honey in a small sauce pan. Cook over medium heat just until sauce is smooth, whisking frequently. Set aside. Makes about 1 cup. Be sure turkey is com pletely thawed. Remove tur key from original wrapper and remove neck and giblets from cavities. Rinse turkey thoroughly with cold water; drain and pat dry with paper towels. Tuck wing tips under back or tie to body. Refasten drumsticks with metal or plastic clip or band of skin. Preheat oven to 325°F. Thinly slice 1 lemon. Carefully loosen the skin of the turkey towards the front of the breast. Using the han dle of a wooden spoon, gen tly slide lemon slices under skin on both sides of turkey. Place turkey breast-side up on wire rack in shallow roasting pan. Insert meat thermometer into the thick est part of the inner thigh; do not let thermometer touch bone. Liberally brush with cranberry honey glaze. Roast turkey uncovered until skin reaches desired brown color; cover loosely with a tent of aluminum foil for remaining time. Continue to baste with cranberry honey glaze during cooking. Roast until thermometer reaches 180°F, approximate ly 2 3/4 to 3 hours. Remove from oven; let stand 20 min utes before carving. Makes 12 to 16 servings. In the air, there’s a feeling of Christmas. There’s also that nagging little problem of what to buy for everyone on your list. May I suggest wine? I mean really, who doesn’t want to receive a bottle of wine as a gift? Wine is a great gift, and people who receive it tend to truly appreciate the thoughtfulness that goes into such a personal item. Of course, not everyone knows the preferences of the recipient, and some fear buying the “wrong wine.” Nonsense. Unless you are picking up a bottle of jug wine or spending less than 5 bucks on the bottle, you are going to do just fine. Of course, If you know something about the tastes of the person you are buy ing for, use that knowledge to help you select your gift bottle. If you are taking a shot in the dark, however, let me break down some suggestions for you by price point. In the under $lO cate gory, use caution. Choose something different, not just another mass produced bottle that anyone can buy in any store and probably already has. Calina Reserve from Chile has a line that includes Carmenere, Cabernet Sauvignon, Chardonnay, and Merlot with above aver age quality for the money. Alta Vista Torrontes from Argentina is a white that is very good as well. Bodegas Norton Malbec, also from Argentina, is a good choice, as is almost any Argentinean Malbec, and most will be under sls, if not at the $lO price point. I don’t know if you can find Laurel Glen “Reds” for under $lO where you live, but if you can, this mm % \ Ocean Spray It’s a margarita salad. You can’t go wrong with any of Andrew Quady’s selections either, including Electra, Essencia and Elysium, all sweet, sparkly, and made from Muscat Grapes. The S2O to S4O range is where we begin to separate the serious wines from the everyday, and these should be for the true wine lovers who appreciate good wine and know the difference. Subscribe today! The New York City Board of Health voted unanimously Dec. 5 to mandate that res taurants stop cooking with trans fat oil by July 1, 2007, and they cannot use ingre dients made with trans fats after July 1, 2008. What does this have to do with your town? Plenty. Let’s start with some quick background. Trans fats are hydrogenated oils, or oils made solid by adding hydrogen to the liquid. They are commonly used for deep frying and baking. However, research has shown that this shelf-stable oil increases the risk of heart disease. Grease a 9 x 5-inch loaf pan. Mix together flour, sugar, baking powder, salt and bak ing soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan. Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 min utes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf (16 slices) Administration estimates that the average American eats 4.7 pounds of trans fats per year -- two times the suggested amount. If topping browns too quick ly, cover with foil for last 10 minutes of baking. Serve warm with ice cream. Holiday cranberry salad A new approach to cran berry salad 1 14 ounce can sweet ened condensed milk 1/4 cup fresh lemon juice 1 20-oz. can of crushed pineapple, drained 1 16-oz. can of whole berry cranberry sauce 2 cups miniature marshmallows 1/2 cup toasted pecans 1 8-ounce carton thawed Cool Whip In a large mixing bowl, stir together the condensed milk and lemon juice. Add well-drained pineap ple, cranberry sauce, marsh mallows, and pecans. Fold in the Cool Whip. Chill over night.
