Houston County Environmental Health inspectors visited the following food service establish
ments between Aug. 6-11. Major problems are corrected before the health inspector leaves the
premises. A rating of 90-100 is considered excellent, 80-89 is good, 70-79 is satisfactory.

Making herbs a part of your cooking
I love my herb garden.
Most afternoons I can be
found there around four
o’clock picking fresh herbs
for cooking supper. I am
particularly fond of fresh
basil. Dried basil is better
than no basil at all, but it’s
not the same! One great
thing about herbs is that,
the more you cut them, the
more you have. In fact, it
is vital for long production
that you do not allow them
to make blossoms and go
to seed. Whenever! gather
herbs, I cut the blooms off
any plants
in the herb
garden.
My herb
garden
is well
matured
and very
fragrant
right now.
I pick just
what I
need and
don’t end

up with dried-out, wilted
leftovers. Before too long,
the cold days of winter will
kill my plants so I am using
them liberally while they
last. They add so much
freshness and flavor to
meals.
Herbs are easy to grow. If
you like to cook and don’t
have an herb garden, you
might consider planting one
next spring. Basil, oreg
ano, thyme, and mint will
grow well in the heat of a
Georgia summer. I must
warn you to be careful with
the mint which is very hardy
and somewhat invasive. It
can take over your garden
and will come back from
last year’s roots. In the
Southeast, parsley should be
partially shaded or it will
burn. Rosemary is an ever
green, perennial shrub. It
is decorative and will last
forever.
If you don’t have fresh
herbs available, dry herbs
can be substituted in the
following recipes. A general
rule is three to one which
translates to 1 teaspoon of

tea for making mint tea
punch since loose, dry mint
would be hard to remove
after steeping.)
Mint Tea Punch
8 tea bags
8 fresh mint springs
1 cup sugar
2 quarts of boiling
water
2 1/2 cups pineapple
juice
1 6-ounce can frozen
lemonade concentrate,
thawed
Additional mint springs
for garnish
Combine tea bags and
mint sprigs.
Pour boiling water over
them and let steep for at
least a half hour. Remove
the tea bags and mint. Add

Transfer to a large pitcher.
Add the pineapple juice and
lemonade concentrate. Stir
well and chill. Serve over ice
garnished with mint sprigs.
A few years ago, I found
the above recipe online (see

Since then it has been a big
hit at every summer party!
Herb and Lemon
Roasted Chicken
3 tablespoons butter or
margarine
1 tablespoon chopped
fresh rosemary
1 tablespoon chopped
fresh thyme
1 clove of garlic,
smashed and chopped
Juice of two lemons
(about 1/4 cup)

salads are attractive and
with just a little added
touch make a beautiful
plate.

Taco Salad
1 lb. ground beef
1 small onion
1 8-oz. bottle Italian
dressing
Cheese
Tomatoes
Lettuce
Nacho chips
Brown meat and onions.
Drain off fat. Place in
bowl.
Add dressing and mari
nate for several hours.
Add cheese, tomatoes
and lettuce according to
taste.
Add regular size bag of
nachos right before serv
ing.
