Fun at the Big Pig Jig
Danny and Julie Evans, family and friends, had a wonderful week at the Big Pig Jig in Vienna. In the background is

FARR: Cooking solo
11/2 tablespoon orange juice
1 tsp butter f
In a small sauce pan, put sugar, cornstarch, salt, juice, and
butter. Cook over low heat until thick and bubbly. Drain hot
carrots and pour into sauce mixture, stirring to coat. Make
sure that you stir gently to coat all carrots.
Parsley Potatoes
Enough potatoes for one serving peeled and cut in quar
ters (if small). If potatoes are larger cut in large chunks. Boil
in a small amount of salted water till done. Drain and pour
the following over potatoes before serving.
1 T. butter melted
1 T chopped parsley
1 tsp lemon juice
Mix well and pour over hot potatoes.
Scalloped Corn
6 saltine crackers, crushed fine (divide in 2 parts)
2 T milk
1 beaten egg
One half T melted butter
One half T minced onion
Pepper to taste
1 small can (1 serving size) cream-style corn or 1 cup
leftover corn
Mix half the cracker crumbs with the milk, egg, corn,
onion, and pepper. When well mixed, put into a buttered
baking dish. Combine the remaining half of the cracker
crumbs and the melted butter and sprinkle over the top of
the corn mixture. Bake at 350 degrees until set and golden
on top.
Salmon Patties
(This came to me from one of my grand-daughters)
1 Small size of the vacuum pack salmon
One half cup chopped tomato
One forth cup finely chopped onion
1 egg
2 T bread crumbs
Salt and pepper to taste
Mix all together and shape into 2 patties. Use 2-3 more
Tablespoons of bread crumbs to roll the patties in. Spray a
small skillet that can go in the oven. Place the patties in the
skillet and spray with cooking spray. Cook in a 425 degree
over for 5 to 10 minutes.

Chicken is usually packaged in packages that are too
much for one or two. Here are some easy recipes to handle
a large package and turn it into several wholesome meals.
If you don’t want to prepare several meals and freeze, wrap
each piece of chicken in plastic wrap and put them in a large
zip-lock bag. Force as much air as possible out of the bag,
label and freeze till needed.
BBQ Chicken
1 leg quarter of chicken or breast
Make the following mixture to put on chicken: 1 T olive
oil, one half cup cider vinegar, 1 tsp poultry seasoning, 2
tsp salt, 1 T catsup and black pepper. Put all over low heat
and stir constantly. When it starts to bubble, it is done.
Heat a small skillet with a Vs tsp olive oil till smoking, dip
the chicken in the liquid mixture and place in the hot pan,
spoon a small amount of the liquid over the chicken and put
in 375 degree oven and bake till done. Baste chicken until
you have used all the sauce.
Baked Chicken
1 chicken breast or 2 boneless, skinless breast
One half cup Italian Bread crumbs
Cooking spray
Mix salt and pepper with bread crumbs and set aside.
Whip chicken with a paper towel and spray with cooking
spray. Roll sprayed chicken in the seasoned bread crumbs
and place on a small pan that has been sprayed with cooking
spray. Bake at 375 for 20 to 30 minutes or until done.
Chicken Pot Pie
1 cup chopped cooked chicken
1 boiled egg, sliced
One half to three forths cup mixed vegetables (practically
cooked)
Mix all together and pour into two small casseroles. Mix
together 1 cup biscuit mix and two thirds cup of milk. Mix
and shape to fit inside the casseroles. Using a knife put
a couple of vents in the top. Bake, if you are going to eat
immediately at 400 till golden brown, cover and freeze for
a later date.

MORE POTATO SOUP RECIPES
Heart-Healthy Potato Soup
2 lbs. Idaho Potatoes, scrubbed and cut in 1/2 inch cubes
(about 5 cups)
1 tbsp. olive oil
2 10 oz. packages frozen chopped onions
1/4 cup chopped dried tomatoes
2 pint, 14 oz. can (46 oz.) low-sodium chicken broth
2 cups shredded, cooked turkey
3 cups packaged chopped frozen mixed vegetables,
thawed
* Alternate Vegetable: 4 cups cooked vegetables
Directions:
In heavy soup pot, heat oil on high and stir in onions.
Cook, stirring occasionally for about 20 minutes or until
well browned.
Add potatoes, dried tomatoes and broth.
Bring to boil and cook covered for 10 minutes or until
tender.
Add turkey and vegetables, return to boil and cook 6-8
minutes.
Top with freshly ground pepper.
Tortilla Soup
10 corn tortillas, cut into very thin strips
Vegetable oil for frying
12 ounces skinless, boneless chicken, cubed
1 cup chopped onions
3 cups chopped Idaho Potatoes (approximately 3 8-ounte
potatoes)
6 cups chicken broth
1 cup frozen cut corn
4.5-ounce can chopped mild green chilies
1/4 cup chopped cilantro or parsley
1 lime, cut into 6 wedges
Note: Potatoes may be peeled, if desired.
In a heavy stockpot, heat 1/4 inch of oil until very hot.
Working in batches, fry tortillas strips until crispy. Drain on
paper towels and set aside.
Pour off all but 1 tablespoon of the oil. Fry the chicken on
high for about 5 minutes or until it begins to brown. Add
the onions and cook another 5 minutes or until brown. Add
potatoes and broth; bring to boiling and simmer, covered for
10 minutes.
Add corn, chilies and cilantro or parsley. Return mixture
to boiling and simmer another 5 - 8 minutes or until veg
etables are tender.
Divide tortilla strips among soup bowls. Ladle soup on top
of strips, and squeeze a lime wedge on top of each portion.
