EAT
A FOOD COLUMN BY GARY KAUFMAN

and pearled barley.)
But I opted for two plump, golden quail
(mercifully devoid of most of ihcir skeletal
structure) sLuffcd with wild rice and biLs of
pancctia, served with onions glazed with bal
samic vinegar. Once again, adjectives fail.
Moist, sweet, smooth, rich, easy and wow all
come to mind, but none seems to completely
describe how well all the flavors and textures
connive and combine to make your mouth a
happy place.
Good as the quail is, a fat slab of perfectly
grilled Chilean sea bass awash in a pool of
roasted tomato sauce infused with basil oil is
better by half. The mild, flaky fish is perfectly
cooked and totally happy being napped in the
gentle wash of the slightly add sauce. It’s
hard Lo imagine so much flavor being pre
sented with such an even and gentle hand.
While portions arc not huge, you’ll be pleas
antly full after two courses and a slice or two
of excellent, chewy French bread. But dessert
comes as part of the three course fixed price
menu, so relax and enjoy yourself.
A small square of tiramisu mimics the sea
bass with its intense, yet not strong, flavors.
There’s no overwhelming essence of booze
here, just a superb balance of alcohol, cake,
cream and espresso.
Way more intense is a warm, airy choco
late cake filled with liquid Vahlrona choco
late and served with a side of especially rich
vanilla ice cream. Warm and cool, sweet, but
not sugary, strong but delicate. Swoon.
Service at Bacchanalia is relaxed, friendly
and without affect—much more sure than when
the place opened.. The wine list is extensive
and reasonably priced, though I’d sure like to
see more varieties by the glass.
About the only complaint 1 ever hear about
this restaurant is that the S27.50 tab is too
much to make it a regular stop. It may be
more money than you want to spend every'
night of the week (or even once a month), but
given the quality of the food, service and sur
roundings, the price is a downright bargain,
Bacchanalia is one of the 90-plus restau
rants participating in Project Open Hand’s Din
ing Out for Life program. On Wednesday,
Nov. 3, 20 percent of your lab goes to Project
Open Hand to help feed people with HIV.
Both the event and the restaurant get top marks.
Red Ribbon Menus
I’mnot exactly sure why Susan Langhomc’s
and Bill Murphy’s new menu cookbook is
called The Red Ribbon Cookbook. Part of the
profiLs are being donated Lo AIDS charities.
And the menus (for two) arc nutritionally bal
anced and designed to be prepared in an hour
or less, which makes them an easy way to
feed yourself and a friend who may be suffer
ing from AIDS. But the end result is simply a
collection of nutritious, easy lo prepare meals
for two.
Most of the ingredients arc fresh. Some
are downright innovative: a spinach, avocado
and (fresh) peach salad dressed with lemon
juice and olive oil sounds might fine to me.
I haven’t had a chance lo cook anything
from the book, but if half the items arc as Fine
as the moist and rich pumpkin/ginger cup
cakes that came with my promotional copy of
the cookbook, then there is some might tasty
eating to be found in these 92 pages.
