(Author of Jewish Cookery)
Cabbage is a very economical
vegetable BUT it offers a maxi
mum return in vitamins and min
erals per serving. It can be used
in dozens of ways, preferably un
cooked ,in salads. It can be com
bined with fruits like apples,
grapes and pineapple chunks or
shreds .With other vegetables like
celery (stalks and roots), green
peppers, onions and carrots, it
makes colorful and tAsty salads.
Adding sour cream to the salad
dressing, plus bits of Cheddar
type cheese and a dash or two of
paprika makes a “company dish”
out of the simplest combination on
lettuce or other salad greens. Ex
cellent midsummer addition to
any meal!
Here are a few suggestions for
salads using cabbage.
Cabbage Salad, Basic Recipe
4 cups shredded or grated cab
bage (tightly packed)
1 green pepper finely diced or
chopped
1/2 cup salad dressing (your
favorite kind)
1/4 teaspoon salt
A dash or two of paprika
Red pepper strips or parsley

Variation 1: Add 1 cup shredded
or finely chopped apple and 1
tablespoon sugar before combining
and add a dash of grated lemon
or orange rind to the dressing.
Garnish with unpared apple slices.
Variation 2: Add 1 cup finely
diced or chopped celery, including
tenderest leaves, to basic recipe
or variation 1.
Variation 3: Add sour cream to
dressing, also bits of cheese.
The other day a group of our
neighbors were talking about dif
ferent food customs, that is, the
different ways of preparation of
foods common to all people. One
dear lady asked: “Don’t Jewish
people have anything like Pickled
Feet — Pig’s feet, I mean, though
I know that pork is forbidden?”
It was put very delicately, of
course. It gave me an opportunity
to talk about our very excellent
substitute known to some of us
by the name of “PITCHA,” to
others as “SULZE” — in other
words, Calf’s Foot Jelly or Pickled
Calf’s Feet. It caused quite a sen
sation. I got out the recipe, of
course. And here it is — just the
th#.g for a hot summer weathe[
menu.
