COOKED ON TOP OF STOVE

and gains its delicately heightened flavor by the use of dry white
burgundy, but almost any dry white domestic wine will serve as
well
1 5 or 6 pound Long Island duckling thawed
1/3 cup parve margarine
lVi cups white wine
1 tablespoon sugar
2 tablespoons lemon Juice
juice of 1 Seville orange
peel of one orange, blanched and rut julienne
14 cup dark stock
pepper, salt and cayenne

Melt half the margarine in dutch oven or heavy kettle. Brown the
duck over medium heat for at least 15 minutes turning every so
often, adding remaining margarine as necessary. Pour off grease and
add 3/4 cup wine and cook covered over medium heat for an hour
or more. Midway during cooking, pour off grease, if necessary, and
add remaining wine.
Simmer julienne orange peel fifteen minutes in one cup of
water. Drain, add sugar, lemon juice, orange juice. Meanwhile re
move duck to pan or ovenproof platter and keep warm in low
oven. Add stock from dutch oven, season with salt, pepper and
cayenne, add to juice and peel mixture, heat briefly and pour over
duck. -
