A Hanuka Menu

Hanuka. It is cold and gray
outside, but warm and pleasant
Inside. In this time of the year
we do lots of entertaining, and it
is worthwhile to encourage a
warm atmosphere by an informal
and casual setting. Our sugges
tion for a heartwarming evening
is a Hot Buffet. We chose dishes
that are traditionally prepared on
Hanuka, but gave them a mod
em “twist.” All the dishes can
be prepared ahead of time. They
are easy to serve and the guests
can also help themselves.
When the dishes are all assem
bled on the buffet they make a
lovely picture to look at. The
table setting is casual and color
ful. We used a ceramic casserole,
wooden salad bowl and platter,
and enameled sauce-warmers.
The Hanuka candles are lit just
to look at, and not for any prac
tical use; nevertheless, they add
gaiety and beauty to the table.
The buffet is composed of a hot
hor d’oeuvre which fits the Han
uka mood: Modem Potato Latkes.
They are made of instant mash
ed potatoes — which saves the
time of peeling and grating fresh
ones. They are baked—so one
can skip the frying. The latkes
can be prepared several hours
ahead, and then reheated.
The main dish is A Whole Meal
In One Casserole. It contains
meat cooked in wine and veg
etables. Please note the two in
novations: First, we omit the
potatoes since some are already
included in the latkes—and who
wants to get stuffed wth potatoes
these days-? Second, we have
added a can of cooked chick
peas which turn it into an Israeli
dish. All the ingredients improve
in flavor when being cooked to-
gether, and the busy homemaker
has just one pot to clean!
The salad and the relishes add
crispness and fresh garden flavor
to the meal. The dessert is char
acteristic of Hanuka and yet it
is new and interesting!. We sug
gest Paradise Pontchekes. We call
them so because they rise by
themselves without any yeast or
baking powder, and their taste is
heavenly. We serve them in a
way that our ancestors did not
know about: We propose to let
the guests dip them in sweet
sauces. For that purpose prepare
long forks and put them near the
plateful of pontchekes. Hav»
ready Chocolate Sauce and Jaffa
Orange Sauce warm on near-by
warmers. For a real special treat
have a small bowl full of chopped
almonds and nuts for a second
dip. Your guests and family will
love this novelty.

POTATO LITRES
1 cup of mashed potatoes
1 cup of all purpose flour
4 oz. margarine (one stick)
one egg
salt
pepper
(Optional—Sesame seeds)
Prepare one cup of mashed po
tatoes according to package di
rections. Add to mashed potatoes
flour and margarine. Mix well.
Add the egg, salt and pepper.
Mix thoroughly. On a lightly
greased baking pan form the
latkes, either by dropping them
from a spoon or by a pastry
bag. Bake in a pre-heated oven
at 400-degrees for about 12 min
utes, or until they are pale
brown.
A WHOLE MEAL IN
ONE CASSEROLE
4 lbs. beef meat
oil for frying
Vi cup flour
Yi cup of diced onions
4 carrots—diced
2 cloves of garlic
1 can tomato sauce
salt, pepper and bay leaf
1 cup of red wine
18 small white onions
18 small mushrooms
1 can of chick peas
Cut the meat into small
chunks. Dip the chunks in flour
and then fry them in the oil until
brown all over. Remove from
pan to oasserole. In the same oil
fry the diced onions and carrots.
Put all the ingredients (except
the last 3) in a casserole. Add
water to oover the meat. Cook
on top of stove until it comes
to a boil. Continue cooking in
the oven at 350-degrees for about
2 hours. About half-an-hour
before serving, add the three last
ingredients. Continue cooking
and serve hot.
PARADISE PONTCHEKES
1 cup of water
1 stick of margarine (4 ox.)
1 cup of all purpose flour
4 eggs
oil for deep trying
Bring the water to boil. Add
margarine and continue boiling
until the mixture looks like a ball
and mix with a wooden spoon
until the mixtre looks like a ball
and leaves the sides of the pan.
Remove from heat. Beat in the
eggs one after the other. The egg
should be completely incorporat
ed before another one is added.
When all the eggs are incorpor
ated the mixture is soft like a
paste. Prepare the oil for deep
frying. When the oil is hot, drop
spoonfuls of the paste. They will
puff in the oil and become gol
den brown. Take them out with
a slotted spoon. Put on paper
towels to absorb excess oil.
Serve hot with warm sauces.
CHOCOLATE 8AUCK
1 cup of light com syrup
2 oz. of unsweetened chocolate
1 teaspoon vanilla
1 tablespoon margarine
Combine the syrup and choc-
late in a sauce pan. Heat until
the chocolate melts, over low
heat. Remove from heat and add
the vanilla and margarine. Keep
warm and serve warm.
JAFFA ORANGE SAUCE
1 cup of orange juice
H cup of sugar
1 tablespoon cornstarch
juice from one lemon
2 tablespoons of orange liqueur
grated orange rind
1 tablespoon margarine
Put orange juice, sugar and
cornstarch in a saucepan and mix
well. Heat the mixture and bring
to a boil. Let boil for one min
ute. Stir constantly so no lumps
will form. Remove from heat.
Let cool. Add margarine, orange
liqueur, lemon juice, and orange
rind. Keep warm and serve
warm. A
