Yesterday’s fresh is today’s frozen

It takes the prospect of three
weeks of yomtovim and feasting to
make me realize just how much the
invention of the deep freeze has
contributed towards the liberation
of the Jewish housewife.
It means I can begin stocking up
months ahead with strudels and
honey cakes, chicken soup and
chopped liver, fned and gefilte fish,
even cheese cake and bombe
surprise, while at the same time
holding down a job and running
the home.
But it’s worth a moment,
though, to remember how it used
to be.
Every Jewish wife used to have
at least two "affairs" in her life, one
with a fish and the other with a
chicken. Both took up enormous
reserves ot her energy.
She would attack her bird while
it was still warm and its feathers
would fly like snow while she'd
unravel its yards of kishkas.
occasionally discovering a
treasured golden egg in their
depths. After koshering and
cleaning she would render its
calorie-laden schmaltz, chop its
liver on a well-worn wooden
board, sew matzo meal and herbs
into pouches of its skin and boil it
all to produce her "curer of all ills.”
Chicken soup resembling nothing
more than molten gold
Her knife would chase her
fingers through home-made dough
to festoon the kitchen with strands
of drying lokshen and as a grand
finale she would produce
kneidlach, light as ping-pong balls
and lluffv as clouds to float on top
of her wonderful soup.
If anyone had suggested that one
day chickens would come ready-
cleaned and koshered in plastic
bags and in two sorts, one for
roasting and the other for
boiling chopped liver in cartons.

schmaltz the quickest way to a
heart attack she would never have
believed it.

long and everyone chanting in

fried, on the bone, off the bone,
wrap the bone, plaice, sole,
haddock, halibut with egg and
lemon, herring, cod. whiting,
mackerel... " All to be cooked the
day before Rosh Hashana and then
again the following week to break
the Fast, yet again the week after

And each week the house filled
with the lingering, unmistakable
smells, the cooker to be scoured
agaip. and clothes and hair
impregnated forever.
Ihe liberated housewife can
now buv the whole load ot lish way
back in August at a cost ot very
little more than that of a new car.
have it all cooked in one go and in
the freezer ready to take out in
portions when needed. And so the
freezer has opened the door and let
the Jewish housewife outside into
the world away from the kitchen
stove.
In my childhood, erev Yomtov
meant a home filled with the smells
of fresh baking and cooking with a
harassed mom flitting desperately
from mixing-bowl to oven to sink
like some demented butterfly. It
seems sad in a way that my own
children will remember only a pile
of polyethylene bags slowly
defrosting on the draining-board
