Vegetable Soup
by Norma Barach
Hot vegetable soup on a cold
winter night is refreshing and
Tilling. I usually make a big potful
which we have for three meals. It
tastes better each time it is
reheated
2 tbsps. margarine
V* lb. mushrooms, diced
2 large onions, diced
1 red pepper, diced
6 medium carrots, thinly
sliced
2 stalks celery, thinly sliced
4 /ucchinis (medium), thinly
sliced
3 potatoes, diced
2 medium turnips, diced
■A small cauliflower,
broken into small
flower ettes
Vi cup barley
salt, white pepper to taste
Brown onions, mushrooms and
red pepper in the margarine in an
8-quart pot. Add remaining
vegetables and barley. Add five to six
quarts of water. Bring to boil, then
reduce to simmer. Add 2 tbsps. salt
and I tsp. pepper. Cook covered
on low heat for 2*A hours. Add
more salt and pepper if desired.
Cauliflower-piive Salad
1 small head of
cauliflower, thinly sliced
■A cup green olives,
drained and quartered
4 black olives, quartered
■A green pepper, diced
■A red pepper, diced
Vi cup Italian dressing
Toss all the vegetables with the
salad dressing. Cover and
refrigerate. Shake a few times
before serving. Serves 4-6.
Okra & Stewed Tomatoes
For a change of pace, try serving
okra as your vegetable at dinner. A
suggestion would be fried or baked
fish, mashed potatoes and okra.
1 small green pepper,
chopped
1 medium onion, chopped
2 tbsps. com oil
10 ozs. frozen okra
1 16-oz. can stewed
tomatoes
Brown onion and green
pepper until onion is golden. Add
remaining ingredients and cook
covered for about 15 minutes.
Serves four-five.

Baked Steak and
Vegetables
Let’s try an all-in-one oven meal
featuring baked chuck steak, baby
onions, new potatoes, and small
carrots.
3'A lbs. chuck steak
(boneless)
2 cups ketchup
4 tbsps. Worcestershire
sauce
2 tbsps. lemon juice'
2 tsps. garlic powder
'A ib. fresh mushrooms
'A lb. peeled baby onions
-I'A lbs. new potatoes,
peeled
1 Ib. small carrots, peeled
Mix together ketchup,
Worcestershire sauce, lemon
juice, garlic powder, and
mushrooms. Pour over steak.
Surround the meat with the
remaining vegetables Bake for
two hours at 350 degrees Baste
periodically. If meat is not tender
bake longer. Serves five-six.
French Lemon Pie
A quick and easy pie which can
be made with ingredients on hand
and in one bowl. To make it even
easier you can buy an unbaked 9-
inch pie shell. It serves eight.
4 large eggs
1 cup sugar
1 cup light corn syrup
'A cup flour
4 tsps. melted margarine
juice and rind of 1 lemon f
Vi tsp. vanilla
whipped cream
Vi cup coconut
Beat eggs and gradually add all
the other ingredients except
whipped cream and coconut. Mix
well. Pour into an unbaked pie
shell and bake at 350 degrees for 45
minutes. Garnish with whipped
cream fluting around the rim of the
pie. Sprinkle with coconut.
