Behind-the-scenes view
“Candle in the Wind," a documentary essay on religion in
the Soviet U n ion will air Monday, Dec. 15at9p.m.onWPBA,
Channel 30.
Many ornate houses of worship much like the ones pictures
above no longer used for religious purposes.
Narrated by John Carradine, the one-hour documentary
provides a behind-the-scenes view of religion in the Soviet Union
from clandestine prayer meetings to officially permitted Ortho
dox church services; from Jewish refusniks who suffer the
consequences of failed emigration attempts to militant Mus
lims, whose religious practices are viewed with greater toler
ance, because of their numbers.
The special was produced by Pacem Partnership Ltd. It was
written and directed by four-time Emmy winner Arthur
Barron.

Marinated Eggplant
One always looks for new
ways to prepare vegetables Mar
inated eggplant is good served
with broiled or baked fish.
8 small eggplants, unpeeled
salt
oil
1 cup medium dry white wine
2 cups olive oil
Cut eggplants in half length
wise. Sprinkle w ith salt and let sit
in bowl for about two hours.
Drain and pat eggplant dry. Heat
a little oil in a skillet. Brown egg
plant. Put into ajar. Cover with
wine and olive oil. Close jar and
refrigerate for two days. Serves
eight-16.
Veal Roast
4 lb. rolled veal roast
8 oz. fresh mushrooms, sliced
2 cloves garlic, crushed
1 onion, chopped
1/2 cup dry red wine
1/2 cup water
oil
Saute onions and mushrooms
in a little oil. Remove. Rub veal
with crushed garlic, then brown
veal. Place veal in a roasting pan.
Mix sauteed onions and mush
rooms with wine and water. Pour
over veal. Roast covered in a
350-degree oven for 2-1/2 hours
or until tender. Baste about every
40 minutes; add more water if
necessary. Serves eight. For even
better flavor, make a day ahead.
Slice when cool and heat in mush
room gravy.
Marinated Vegetables
1 #303-size can garhan/.o beans,
drained
1 #303-size can French style
green beans, drained
1 #303-size can corn kernels,
drained
1 #303-size can peas, drained
l cup carrots, sliced into thin
rounds
1 cup thinly sliced celery
1/2 of small head of cauli
flower, broken into small
flowerets
1 Spanish onion, chopped
1 green pepper, diced
3/4 cup white vinegar
3/4 cup corn oil
2 tbsps. water
Corn Fritters
1-1/2 cups flour
1 /2 tsp. salt
2 tsps. baking powder
2 tbsps. sugar
1/2 tsp. vanilla
2 eggs
1/4 cup milk
11 oz. can drained corn niblets
Add all ingredients and mix
well. Put margarine or oil in a
frying pan. When it is hot, drop
the corn fritter mixture into the
pan by tablespoonsful. Fry on
both sides. Drain on paper tow
els. Serve with maple syrup or
plain.

Mix vinegar, oil, water, salt
and pepper. Place drained canned
and fresh vegetables in a bowl.
Coat with dressing. Cover and
refrigerate 20-24 hours. Serves
12-16.

Why is it a special honor to
remove and return the Torah
Scroll from and to the Ark?
There was a time in Jewish his
tory when it was not safe to keep
the Torah Scroll in the synagogue,
because of enemies who would
seek to break in and destroy the
Scroll. Instead, a trustworthy,
loyal Jew would keep the Torah
at home and bring it to the syna
gogue whenever necessary. Now,
when the times allow' a Torah to
be kept safe in the synagogue,
taking it out of the Ark and
returning it remain actions of
honor.
Why is it required to have a
quorum present at a Jewish
wedding?
While it might seem that a
wedding is strictly private, it is an
event that affects the public, as
once the couple is married, neither
spouse can marry again without
a divorce. Thus, the ceremony is
held in public. It is also claimed
that a happy occasion such as a
wedding should spread joy unsel
fishly among others in the com
munity. Thus, at least the quo
rum (minyan) is required.
Why do traditional Jews resist
counting people by numbers?
Some commentaries trace this
back to the system mentioned in
the biblical Book of Numbers.
Moses was commanded to count
the Israelites by collecting a half
shekel coin from each of them,
and not by actually counting the
people.
The mystics indicate that
counting people can he damag
ing to their destiny. So to make
sure, for example, that a quorum
of 10 is present for public prayer,
those present are identified with
a word of a 10-word passage in
the Psalms. Thus, the words are
counted, not the people.
Why does the leader of the ser
vice (the cantor) repeat the main
body of prayer—the “Shemonah
Esreh”—after the individuals of
the congregation have recited it
in soft tones?
There are really two dimen
sions in Jewish prayer. One is the
community prayer, the other is
the individual prayer. Both are
required to fulfill the obligation
of prayer in Jewish traditions.
The public dimension is fulfilled
by the loud recitation of benedic
tions chanted by the leader with
the congregation responding
“Amen” after each.
I his type of public prayer,
according to some commentar
ies, even comprises the people
who are not present in the syn
agogue, since the prayers are
always said in the plural.
The Talmud explicitly says the
basic reason for the cantor’s
repetition of the prayers is be
cause some of the individuals
might have made an error in
some of their recitations. Thus,
