As fruit promises to be more abun
dant in Texas this year than ever be
fore, I think an article on the art of
preserving fruit, hermetically, will be
of interest and value to your readers
at this time. It is gratifying to ob
serve how the preserving of fruits and
vegetables, hermetically, has increased
in the last tow years; for to provide a
sufficiency of fruits in their natural
state, for winter
says, “draw and salt them slightly,*'
but be sure to use a good clean box.—
The wings should be pressed as close to
the body as posable. Settle the fowls
in layors in the boxes, so as to fix them
in their proper positions, and to pre
vent any possibility of injury to the
other skin in transportation. When a
box is full, put some fresh dean straw
on the top, and also in the bottom and

oi fruits, hermetically, is to retain
. their natural flavor and freshness, the
methods cl* which consist in a cont
inuation of chemical science, and with
■mechanical application.
By the aid of the former we expel
tffihe element producing fermentation
(fresh air,) and, by the latter, protect
the fruit from further contact with it.
•The agency employed to expel fresh
air'■!«‘beat, by exposing the fruit to it
until heated through, and by confining
it in air-tight vessels, we accomplish
the latter.. The great secret consists
in procuring none but ripe, sound and
fresh fruit, iu a proper preparation of
it, effectually expelling the oxygen

jar and safely sealing the same. At
tention will be directed to each of

«e that the latter are the best and
most economical, provided you select
good ones,for thc.reasun that a good

jars are filled, place in a .vessel of
water. The water can be hot or warm,
if the jane are gradually .immersed.—
This will cause a gradual expansion of
the gloss. By this process Jess jars
will be broken .than by ’filling itfiem
with bet fruit after it has-bean .cooked
or heated. All the heat fruit gener
ally requires is enough to.havecthe.heai
thoroughly penetrate to all pans of it.
A very hale sugar sprinkled between
the layers as put in jars, is all .that is
necessary.
After taking tbe.lfOlja.re from, (the
water, place the India rubber ring
(which goes with the jars,) over the.
top of the grove, and the .metolic fop
.should at once be screwed down .tight.
Keep jura out of the .wind -while,
cooling to prevent breakage. In put
ting away fruit until wanted for oise, a
cool, dry place is preferable.
As a general thing, when fruit .as
heated longer titan necessary to heat .t
thoroughly through, it injures Jhe
beauty and appearance uf.it, by discol
oration, and detracts from its dunor.
Therefore, every oue should endeavor
to learn how (uueh heat .each .kind .«1

sirable effect. As this , article has al

Advice to Tonng Farmers.
Do not use manure to enrich land.
As if you could mend nature’s works!
Besides it is offensive to the sight and
smell.
Plow not frequently, nor deep—it
will fatigue yourself and team.
Weeds are the worst occupants.
Grow they will. Grub, pluck, appar
ently destroy them, they will coihe
bark, as if they knew by instinct, you
had uo right to expel them. You had
better mind your own business, and let
them alone at once, and be done with
it. You will save a great deal of
trouble.
As to tools and instruments of hus
bandry, the worst ones dVe the better,
betause the worst are the cheapest, and
you will .be least injured when they
are broken, worn out or lost. Leave
your implements and utensils of farm
ing where you leave off" work. They
will be ready for you.next year. That
is economy of time. “ Time is money,”
l>r. Franklin says. So you sec you
save mouey.
When you borrow, never return the
borrowed articles; they may be wanted
again. Besides, it takes time to carry
them home. The man who lends Jias
as much time as you. If he does not
come or send for them, they will be as
useful to you as if they were your own.
Never put back into its place, a rail
or a stone that has falleh from yoipr
fence. Ten to one, these, or others
equally slippery or treacherous, will
trouble you again by their falling. In
ail events delay os long as possible.
And supposing your neighbors’ stock
eat your crop, it will do them some
good, and save you the sweat of har
vesting.
. Keep the cheapest and least valuable
breeds of cattle you can. The loss is
less'if ithey die; and die they must, be
they Short Horns, Ayrshires, or Here-
fords.
In feeding your cattle, I need not
tell you the less you give them the
cheaper you keep them ; but one thiug
I must suggest: the more lavishly you
deal out your fodder, the sooner the
drudgery will be over.
If you must hire steady help, take
the first vagabond you meet. It will
be a cheap bargain, for he will proba-
Uy go off unpaid, and only carry oil
«ome trifles with him—such as a gold
watch or a horse, neither Of which you
want very much; and will not miss—
until ho is gone. Dukie.

We once read a story of a gentle-
on whose wealth consisted in tLe
onuership of one thousand acres of
fctuil, and he was the father of three
daughters. One of his daughters
married, and he gave her 250 acres,
and continued the cultivation of the
750, and made ns much ns when he
euitivatci. the one thousand. Another
daughter married and he gave her 250
acres, and uflcrwards made os much
from the remaining 500 acres os he
laid formerly from the one thousand ;
und the other daughter married, aud
he gave her 250 acres, and applied nil
his force and knowledge to the 250
acres left him and the results were as
great and as satisfactory as when he
cultivated the one thousand. By the
division of ids farm four families were
provided with homes, and the means of
independent sustenance, nor were his
profits made to suffer or diminish.
Tlie moral of the above is to attempt
the cultivation of no more land than
you can cultivate well, and by your
thirst crowd out worthy men, by placing
out of their reach homes for themselves
and families. It would be far better
for our co-mtrv if every tiller of the
soil was tho owner of one hundred
acres, which he could beautify and
mnke productive. Attachments would
bo firmer and tastes created that would
be of incalculable benefit to thecountry.
Small farms, well cultivated, is the
great desideratum for the American
former.—Ttniu**ee Agrieuliurint.
