TO MAKE TABLE JELLIES.—Use nt least
two ounces of Cooper’s Rotined American Isin
glass, which should lie first soaked in cold wader
for two hours; drain olftlmt water, then take two
quarts of cold water, one and a half pound ofsii-
gar. put in it the while of three eggs, the juice of
throe good sized lemons, the peal of one, a stick
of cinnamon, 11 little nutmeg, orange peal, or
other spice to suit thu taste; stir all the iugredibiits
well together while cold, then hoil the whole
mass four or five minutes, and then pour it
through a Jelly Bag; when it may be put into
glasses or moulds, and when cold,* will lie fit for
use. The moulds should In* lir-t wet with a lit
tle white of egg and waiter just before the jelly
is put iu them, iu order to uiuko it easy to turn
them out on pinto.*.
The Jelly ilu*j is made of llaimel 8or 10 inches
across the opening, and about half a yard, deep,
narrowing 10 a point at the bottom. The liquid
