trees and ornaments are packed
away that the spirit of Christmas
will linger in your homes and
hearts.

FUTURE HOMEMAKERS
CELEBRATE CHRISTMAS?
The Cumming Chapter of Future
Homemakers of America celebrated
Christmas with a party and Christ
mas program. Martha Lee Pendley
was in charge of the program and
did a splendid job of pojrtraying
the true meaning of Christmas.
The Future Homemakers were
interested in learning how Christ
mas is celebrated in foreign coun
tries, which was explained by a
panel of Future Homemakers. The
scripture which we call “The
Christmas Story”, was read. This
part of the Bible tells the story of
the birth of our Savior nd Lord.
Christmas carols were sung by
the group throughout the entire
program. Everyone received joy
and happiness from singing and
also, from the giving and receiving
of gifts.
The Future Homemakers were
happy to have their Chapter Moth
ers, Mrs. Jake Wolfe, Mrs. Weldon
Bramblett, and Mrs. Edwin Otwell
present. They were pleased to have
their advisor, Miss Wilma Ivie sing
Adeste Fideles.
At the end of the program, re
freshments were served and every
one departed with the spirit of
Christmas.
The Future Homemakers wish
everyone a Happy and Prosperous
New Year.

SUGGESTIONS FOR FREEZING
BAKED PRODUCTS GIVEN BY
HOME DEMONSTRATION AGT.
Southern hospitality gets an ex
tra boost from the homemaker who
keeps several pies in her freezer,
says Mrs. Zelma Bannister, home
demonstration agent in Forsyth
county. Such a homemaker can is
sue spur of the moment invitations
with pleasure and greet unexpect
ed guests without a worry about
what to serve for dessert, she ex
plains.
Chiffon, fruit, mtnce, chicken,
and meat pies freeze well. Custard
pies do not. When you freeze a
cream pie the filling tends to be
come grainy and lumpy and to
crack or curdle. Pies with merin
gue don’t behave well in the freez
er, either .Meringue getts tough
and shrinks when it’s frozen.
If you stick to freezing fruit and
mince pies you’ll have better re
sults. Fruit pies may be frozen
either before or after baking. But
the crust is tenderer and flakier
and the flavor fresher when pies
are frozen before baking. Besides
that, when you bake them ahead of
time and only have to warm them
before serving, you miss the won
derful aroma of a baking pie.
If you plan to freeze pies, buy
paper plates manufactured for that
purpose. They are cardboard with
a metal rim. Grease the sides and
bottom of the plate with a mixture
of two parts shortening and one
part flour before lining with pastry
That’s just a precaution against a
soggy bottom crust. After you line
the plate, brush just film of melted
fat over the pastry. That’s to seal
it and keep it from becoming sat
urated.
If you are going to use a thick
ening material in your fruit pie
for freezing, make it corn starch
or tapioca.
Another thing about fruit pies—
there is some special treatment you
can give them to preserve color
and flovor—especially for such
fruits as apples and peaches in
unbaked pies.
Steam applies two minutes, cool
and drain. Another method you can
use is to dip raw applie slices in a
solution of one-half teaspoon of
ascorbic acid to one cut of water.
Applies for four or five pies can
be dipped in this amount of the
solution. And while you’re prepar
ing pies for freezing, you might
as well make several.
