Hot Muffins Hit Spot For Fall Appetites
II is uncertain that the origin
of the word "muffin" is "mouf
flet," which is Old French for
soft {bread). However, it is very
much a sure thing that the cup
shaped, quick, light bread we
have all come to love and enjoy
is always a treat when served,
warm and fragrant, with any
meal any time. Here is a recipe
from the Bordo date kitchens
for date bran muffins that your
whole family will welcome. Sift
3/4 cup sifted flour. 1 tablespoon
PEANUT-ORANGE MUFFINS
Makes 12 muffins
2 cups pancake mix
!4 cup sugar
>/ 3 cup chopped peanuts
1 egg, beaten
1 cup milk
Heat oven to hot (425° F.). Combine pancake mix and sugar
in bowl. Stir in peanuts. Add egg, milk, shortening and orange
peel, stirring only until combined. Fill greased muffin cups 3 A
full. Place Vs teaspoon orange marmalade in center of each
muffin. Bake in preheated oven (425° F.) 15 to 20 minutes.

GOLDEN FRIED CHICKEN
(4 to 6 servings)
3 pounds frying chicken parts
Salt
Flour
',4 CU P salad oil
2 tablespoons freshly grated
orange peel
Season chicken pieces on all sides with salt to taste; coat
well with flour. Brown in hot oil until richly browned and
crispy. Pour off any excess oil. Combine orange peel and juice
and brown sugar; pour over chicken. Cover and cook over low
heat until tender, about 30 minutes. Serve hot or cold, gar
nished with fresh orange slices.

baking powder, and 1/2 teaspoon
salt together. Add 1 cup bran and
1 8-ounce package of Bordo
imported diced dates. Beat 1
egg. Add 1/2 cup milk, 1-1/2
tablespoons dark molasses and 1
tablespoon melted butter. Mix.
Add dry ingredients to egg mix
ture. Mix only enough to dampen
flour. Fill 12 greased muffin
pans, or muffin papers, 2/3 full.
Bake at 400° for 25-30 minutes,
or until muffin tests done. Serve
with certainty!

a cup of hot chocolate,
topped with whipped
