Giving Eggs
Tender Care

be. “Eggs are rushed from
the hen house to a refriger
ated storage room as soon as
they are laid,” Linda Wall,
extension service food and
nutrition specialist at the
University of Georgia, said.
“There they are kept in car
tons until they are shipped to
a retail store.”
“Most retailers take care
to store and display eggs in
temperature-controlled
cases, for an egg left at
room temperature tends to
lose its quality quickly.”
Since eggs are so carefully
tended, it would be wise to
follow through with this ten
der loving care at your
home.
Ms. Wall offers these tips
on egg care:
To maintain freshness,
store eggs in their original
carton in the refrigerator.
Eggs should be packed large
end up.
lf you store eggs in the
special egg trays on the re
frigerator door, warm air
hits the eggs every time the
door is opened. This practice
is not recommended.
Never wash eggs. Most
have already been washed
and dried by the producer
under controlled conditions.

Cumby of Smyrna, enrolled
in a computer programmer
training project for severely
handicapped persons, he
thought he was “getting in
volved with a lot of people
with a lot of problems. I was
afraid of being dragged
down,” Cumby, a quadra
plegic, said.
But he soon found out that
was not the case. Cumby and
14 other severely hand
icapped persons who en
rolled in the Georgia
Computer Programmer Pro
ject for Severely Hand
icapped Persons found that
they had to work hard to
learn the jobs which would
come later.
The project, which is the
only one of its kind in
a decline in quality by
breaking down the egg
shells’ natural protein coat
ing.
A broken egg can be
opened into a plastic con
tainer, covered and refriger
ated for a day or two. Egg
whites can be refrigerated in
a similar manner.
Egg yolks will keep in a
container with a little water.
Egg whites also freeze beau
tifully, to be whipped up
later.
ln a frost-free refrigera
tor, eggs should be covered
either by their carton or a
wrap to maintain their qual
ity.
Preventing The
Mealtime Trauma
ATHENS Does your
child sometimes become dis
gusted with food?
As a parent, you wonder
how to increase your child’s
interest in food and whet his
appetite.
Ms. Wall offers these sug
gestions that might help to
prevent “mealtime
trauma.”
lnvolve the youngster in
grocery shopping and food
preparation, explaining
which foods are good for
people and why.
Allow the child to pre
pare some snacks without
help, such as cheese or sand
wich spread. Many children
enjoy making and eating
“mixtures.” Provide the
necessary ingredients and
bow out. Older children
might want to try recipes
from a young people’s cook
book.
Make foods visually ap
pealing to the child, such as
a hamburger with a cheese
and carrot strip “face” or
animal-shaped sandwiches
cut out with cookie cutters.
Provide attractive ac
cessories, such as the young
ster’s own decorated plate
and cup; colorful plates,
Georgia, began in March. It
is a joint effort of the Divi
sion of Vocational Rehabili
tation of the Georgia
Department of Human Re
sources. The Georgia Insti
tute of Technology, Goodwill
Industries of Atlanta and a
number of local companies
and corporations. The pro
ject provides extensive
training in computer pro
gramming and future em
ploy me n t when the
necessary training is com
pleted. It is a concentrated
eight-month course with a
two-month on-the-job inter
nship.
The project is funded with
a $70,000 grant from the fed
eral Rehabilitative Services
Administration and a $54,000
grant from CETA (Compre
hensive Employment and
Training Act). Additional
contributions from the pri
vate sector bring the funding
base to more than SIOO,OOO.
“The program’s terrific,”
Theresa Schaber, student,
said. “It gives me the ability
to do something; the oppor
tunity is great. It’s one of the
greatest things that has hap
pened to me.’”
The program is also at
tractive to major industries,
because of the growing de
mand for computer pro
grammers. In addition,
federal tax credits are
granted to employers who
employ handicapped per
sons.
Changes in location and
equipment have been made
at both the training site at
the Georgia Institute of
Technology and at the indus
tries. Modifications include
the keyboard punch stick,
such as the one Schaber at
taches to his hand, or the
cups and napkins, or attrac
tive washable placemats.
Let the child eat away
from the table on occasion.
A lunch box picnic, to be
eaten while sitting on a blan
ket either indoors or out, is a
pleasant variation.
Do not allow the child to
fill up on “treats” shortly
before mealtime or after an
uneaten meal.
