Apples In Your Diet
County Agent
Does your mouth water
when you view delicious
apples?
It’s that special time of
year when you can stop by
your favorite road side stand
and look over the fresh va
rieties of Georgia-grown
apples.
I can still remember that
while going to college foot
ball games a season or two
ago, I would catch myself
memorizing landmarks that
would enable me to easily
find the right fruit stand af
ter the game. It always
seemed to me that being
able to select them out there
in the open air, not far from
the apple orchard, and buy
ing them from the people
who watched them develop
from the apple blossom to
the final product was an ex
tra treat.
When you are out and
about this fall, be sure and
include fresh Georgia apples
in your diet.
When buying, select
apples for their intended
use. Apples with bruises or
blemishes or other defects
should be used at once. It is
true that “one bad apple can
spoil the barrel,” so sort
them oftdn. Apples with sur
face russeting, or brownish
roughened areas on the skin,
are perfectly all right to buy
and use, even though their
appearance may be marred.
It is usually more econom
ical to buy apples in large
quantities while they are in
season. Most Georgia varie
ties will keep several
months if stored at cool tem
peratures. Freezing and
canning will assure a supply
year round.
Only perfect apples, free
of bruises and decay, should
be kept for later use. Slightly
underripe apples can be al
lowed to ripen for up to two
weeks at room temperature.
Apples ripe enough for
eating should be refriger
ated. Place a reserve supply
in the hydrator of your re
frigerator, or into large plas
tic bags with small holes to
maintain the proper humid
ity. This will prevent the
apples from becoming over
ripe, soft, or mealy.
Canning Apple Slices
Wash, peel and core
apples. Quarter or slice.

The children of Mr. and
Mrs. Curtis Barron will host
a reception to celebrate the
fiftieth anniversary of their
parent’s marriage on Sun
day, Sept. 21 from 2 to 5 p.m.
The reception, which will
be held at the Barron home
off Highway 19 in Cumming,
is expected to draw five gen
erations, many from the
Cumming area.
Mr. and Mrs. Barron bave
nine living children, all of
Cumming, 22 grandchildren
and seven great grandchil
dren.
Mr. Barron’s mother,
Roxie Barron, will attend.

Treat apples to prevent
darkening with a powdered
ascorbic acid mixture,
according to the package di
rections. An older, but less
effective method is to drop
apple slices into water con
taining 2 tablespoons each of
salt and vinegar per gallon.
The apple slices treated like
this must be thoroughly
drained before packing.
Boil the apple slices in a
thin syrup (2 cups of sugar
to 4 cups of water) for five
minutes. Pack hot fruit into
jars. Cover with syrup, leav
ing Vt. inch headspace. Re
move air bubbles by running
a knife between food and jar.
Adjust jar lids.
Process in boiling canner
(212 degrees F.):
Pint jars, 15 minutes.
—Quart jars, 20 minutes.
Freezing Apple Slices
Wash, peel and core
apples. Slice into twelfths or
sixteenths.
Syrup Pack. This is pre
ferred if slices are to be used
without cooking.
Make 40 percent syrup by
disolving 3 cups sugar in 4
cups water. Chill. When re
ady to use, add ascorbic acid
or an ascorbic acid mixture
to syrup. Slice apples into
cold syrup.
Package apple slices. If
using rigid containers, add
enough syrup to cover. Put a
piece of crumpled wax pa
per on top to keep the apple
slices down in the syrup.
Leave % inch headspace—
the smaller amount for
wide-mouthed pint con
tainers, and the lesser
amount for narrow mouth
quart containers. Seal,
freeze and store at 0 degrees
F. or below.
Sugar Pack. This is pre
ferred for slices to be used in
pies.
Slice apples into cold wa
ter containing an ascorbic
acid mixture (follow the di
rections on the package), or
salt (2 tablespoons of salt
per gallon of water) to pre
vent darkening. Drain.
Sprinkle % cup sugar over
each 4 cups of apple. Turn
slices gently until sugar has
disolved. Package, leaving
headspace as in syrup pack.
Seal. Freeze.
Unsweetened Pack. Fol
low directions for sugar
pack, but omit the sugar.

Time To Start Coupon Club

I hope many readers are
ready to turn their casual
swap sessions into regular
coupon clubs.
If you have enjoyed trad
ing your coupons and refund
forms with a few friends
over coffee, you may wonder
how you would benefit by
formalizing your sessions.
The answer is simple: cou
pon clubs usually have be
tween 15 and 30 members.
This gives you a chance to
find more of the coupons and
refund forms that can save
you money.
When I first joined a cou
pon club many years ago, I
found that I learned a lot
from some of the more expe
rineced members. Many of
them also traded refund
forms by mail, and I was
soon following their exam
ple.
Because they traded hun
dreds of forms each month
with refunders in other parts
of the country, they brought
to the coupon club a greater

Forsyth County, there will
be a “story comer” featured
at the Cumming Country
Creations Bazaar to be held
Oct. 18 and 19 at Cumming
Elementary School.
Readers of the stories,
which have been passed
down through generations,
will be Gladys Barett, board
member of Cumming City
Parks and Recreation, and
Miss Maynard
Gets Scholarship

who will be a sophomore at
Reinhardt College, has been
awarded a SSOO scholarship
by the Board of Higher Edu
cation and Ministry of the
United Methodist Church.
Miss Maynard is the
daughter of Mr. and Mrs.
James B. Maynard Sr.
United methodist schol
arships are normally given
to cover tuition and fees.
The scholarships are
granted on the basis of aca
variety of forms than I had
ever seen before.
As a club, we have a lot
more fun than any of us used
to have swapping coupons
over the kitchen table with a
few friends. And we have ac
complished many important
things that could only have
been done by an organized
group.
Are you tempted? Then
take the plunge and start a
coupon club. You have noth
ing to lose but your duplicate
forms and unwanted cou
pons and so much to gain.
The first thing you do is to
pick a date for your organi
zational meeting. Make it
three or four weeks in ad
vance to give yourself time
to prepare and spread the
word.
Most coupon club meet
ings take place on weekday
evenings. They usually start
at 8 p.m. and run for two or
three hours.

know that you are starting a
club is to put a small adver
