Simple cookies, the kind mother made only on special holidays

THIBODAUX, La. Does your
child come home from school to
home-baked cookies?
If the answer is yes, you get the
mother-of-the-year award. If not you
get the guilts.
That shouldn’t be the case. After
all, homemade cookies should not be
the ultimate test of motherhood. If
the truth be known, my mother didn’t
bake cookies except at Christmas
time and she was as good as mothers
come. Still, there is something about
the start of school that brings up a

mend as a back-to-school present If
you didn’t make it with a plate of
cookies on the first day of school, do

So if you skipped the first-day-of
school cookie ritual, never fear. Arm
yourself with cookie recipes and be
ready for the next cookie occasion.
A recipe I found in the Bon Appe
tite “Cookies” book has met with
high praise at my house. (I baked
them in preparation for this column,
not for the first day of school, you
understand.) The cookies were sim
ple enough, made with oatmeal and
Rice Krispies. A touch of cinnamon

baking. They have a chewy texture
and store well in a tightly-covered
container, that is if you have any
cookies left
SIMPLE COOKIES
1 cup butter or margarine
1 cup firmly packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup quick-cooking oats
1 cup Rice Krispies
Cream butter or margarine and
sugars until well-blended Add eggs
and mix well. Add vanilla. Sift to
gether flour, baking soda, cinnamon,
baking powder and salt Gradually
add to sugar mixture, beating well.
Drop by teaspoonsful on ungreased
baking sheet Bake about 10 minutes
at 350 degrees. Cook on wire racks.
Store in an air-tight container.
