Pet of the week
My name is “Teka and I
am looking for a new home. I
am a 10-month-old female
Jack Russell and Blue Heeler
mixed-breed dog. I am white
with black spots. I have brown
ears and a brown patch over
one eye just like Wishbone. I
will be a wonderful family pet
because I am very affectionate
and playful. I am outgoing and
very intelligent, too. I like
children and other dogs. I love
to play with toys and wrestle
with my big dog friend who
weighs 80 pounds. When my
foster mom says “It’s time for
bed,” I go right to my crate. I
need to live in the house and
have a fence to play in or you
could walk me on a leash. I
am already spayed and I am
current on all of my vet care.

It’s the season to make your own salsa
Americans love their salsa!
They love it so much that this
tangy condiment is in hot
competition with ketchup for a
spot on the country’s list of
favorites.
And, with the turn of the
calendar to August, salsa sea
son is here. Tomatoes and pep
pers soon will overflow in
home gardens and farmers’
markets. It’s the time of year
to try your hand at making and
preserving salsa.
Most salsa recipes are a
mixture of tomatoes, onions,
peppers and spices. If made
with a sufficient amount of
acidic ingredients (tomatoes,
lemon juice and vinegar),
salsa can be processed safely
in a boiling water canner. For
those who are creative and
develop their own recipes, eat
ing fresh salsa or freezing it is
recommended.
The type of tomato used in
salsa will affect its quality.
Paste tomatoes, such as Roma,
have firmer flesh and produce
thicker salsa than large slicing
tomatoes. Although both types
make good salsa, slicing toma
toes usually yield a thinner,
more watery product than
paste tomatoes. You can add
tomato paste to thicken salsa.
Local SAR chapter earns special honor
The Piedmont Chapter of the Sons of the
American Revolution has received the President
General’s Cup as having the most complete pro
gram of activities within the National Society.
The society has membership of more than
26,000. This is the second consecutive year that
the Piedmont Chapter has been selected for this
prestigious award. The chapter’s name is
inscribed on a silver cup kept at the National
Headquarters in Louisville, Ky.
The chapter was also awarded the President
General’s Activities Award for the second year
in a row. This award is based on evidence of
promoting SAR activities within the communi
ty. A streamer was presented for the chapter to
add to its SAR flag.
Additional awards included, for the fifth
consecutive year, the USS Stark Memorial
Award as the outstanding chapter of the SAR

Peppers range in taste from
mild to fiery. Very hot peppers
usually are small and provide
a distinct taste to salsa.
Jalapeno is the most popular
hot pepper. Other favorites
include Serrano, Cayenne,
Habanero and Tabasco. Wear
rubber gloves when cutting or
dicing hot peppers because
peppers can cause extreme
irritation to the skin. Be espe
cially careful not to touch your
face, particularly the area
around your eyes, when work
ing with hot peppers.
Mild peppers usually are
larger than hot peppers.
Examples of popular varieties
include Anaheim, Ancho, and
Hungarian Yellow Wax.
Choose a mild pepper when
the recipe calls for long green
chiles. For variety, substitute
bell peppers for some or all of
the long green chiles called for
in a recipe. The skin of long
green chiles can be tough; you
can remove the skin by heat
ing the peppers. When peppers
are finely chopped, however,
they usually do not need to be
skinned.
It is important that salsa
processed in a boiling water
canner contain an acid ingre
dient such as lemon juice or
for its participation in veterans committee activ
ities. The final award presented was the Carl F.
Bessent Award to the editor for the most out
standing chapter newsletter.
The Piedmont Chapter serves the communi
ties of the northern suburbs of Atlanta, includ
ing Cobb, Forsyth, Cherokee and North Fulton
counties. Activities include programs to pro
mote patriotic, educational and historical inter
ests resulting from the American Revolution.
Prospective members are welcome at meet
ings held on the third Saturday of each month at
the Alpharetta Marriott Courtyard. Men, 18
years of age or older, who are interested in doc
umenting their relationship to their American
Revolutionary ancestors and in joining an active
group with similar interests are encouraged to

potential to support the growth
of Clostridium botulinum.
Lemon juice often is the acid
of choice because it is more
acidic and has less effect on
flavor than vinegar. It also
adds vitamin C to the salsa.
Use only vinegar that is at
least 5% acid and use only
bottled lemon juice.
Do not can salsas that do
not follow research tested
recipes. Other recipes may be
stored in the refrigerator or
frozen.
