Hearty soups and
stews for Winter
As of this writing it is
71 degrees outside, so it
doesn’t really feel like
winter.
However, we all know
we will get more cold
weather at some point
this season and when it
does hit, these are the
perfect dishes to serve on
a cold night.
I love to sit by a roaring
fire while enjoying a
hearty soup or stew. Just
add some crusty bread
and your meal is com
plete.
Mushroom ragoiit
5 tablespoons butter
2 cups onion, chopped
4 portobello mushroom
caps, gills trimmed and
chopped
2 cups white mush
rooms, sliced
1 cup shitake mush
rooms, stems removed
and sliced
3 garlic cloves,
chopped
1 teaspoon fresh thyme,
leaves removed from
stems and chopped
1 teaspoon fresh sage,
chopped
1/4 cup dry sherry or
Madeira
6 cups vegetable or
chicken stock
1 can (14.5 ounce) can
crushed tomatoes
1 teaspoon balsamic
vinegar
1/4 cup Italian parsley,
minced
Melt 2 tablespoons but
ter in a large pot. Add
onions and cook until
softened, about 10 min
utes. Stir in portobello
mushrooms, white mush
rooms and shitake and
cook until soft, about 10
minutes, stirring often.
Continue cooking, stir
ring for another 10 min
utes until mushrooms are
fairly dry. Add garlic,
sage and thyme for 30

pasta and beans. The
Americanized version is
pasta fazool.
This is a serious com

Chicken stew
3 pounds boneless,
skinless chicken thighs,
trimmed and cut into bite
sized pieces
Salt and pepper
3 tablespoons canola
oil
2 cups onion, finely
chopped
4 cloves garlic, finely
minced
1 teaspoon fresh thyme,
leaves removed from
stems
1/4 cup flour
1/2 cup dry white wine
4 cups chicken stock
1 pound red potatoes,
cut into small chunks
3 carrots, peeled and
cut into 1/2-inch slices
2 bay leaves
1 cup frozen peas
1/4 cup Italian parsley,
minced
Season chicken thighs
with salt and pepper.

chopped
3 anchovy fillets or 1
teaspoon anchovy paste
1 teaspoon dried orega

1/2 teaspoon crushed
red pepper flakes
1 (28-ounce) can diced
tomatoes, with the juice
2 (15-ounce) cans can
nellini beans, drained and
rinsed
4 cups chicken stock
Salt and pepper to taste
8 ounces small pasta
(my favorite is ditalini)

Preheat oven to 300
degrees.
In oven-proof soup pot.
heat a tablespoon of oil
over medium-high heat.
Add half of the chicken
and cook until slightly
browned, about five to
seven minutes. Remove
with a slotted spoon and
add a little more oil and
then brown the remaining
chicken.
Transfer to the platter
with the other half of
chicken. Add some more
oil to the pot and cook the
onion until softened,
about eight minutes. Stir
in garlic and thyme and
cook another 30 seconds.
Stir in flour and cook a
minute.
Remove from heat and
add the wine. Return to
heat and cook for a min
ute, allowing wine to
reduce. Add chicken
stock, potatoes, carrots,
bay leaves and the
- chicken along
with any juices.
Cover pot and cook in
oven until chicken is ten
der, about 45 to 50 min
utes. Remove bay leaves
and stir in peas. ,
Cover and allow to sit
for five minutes. Stir in
parsley and serve.
