Poor Man's Pudding.—Abeut 10 o’clock in
the morning, pick over, wash and put to
aoak, in a little more water than enough to
cover, one cupful uf rica. About 2 o'clock,
If any water remains, draw ic off; place the
rice in your pudding dish, add one cupful
sugar aud one leoppoontul of salt and eleven
cupfuls milk aud spice; put this into a mod
erate, oven nnd bake from two to three hours,
stirring occasionally at first if tho rice settles
Based Pudding. —Three tablespooniuls of
com starch b one quart of milk. Prepare

ter it is cool, stir up with it thoroughly two
or three eggs, well beaten, nnd hake half un
hour.
