FARM AND GARDEN Choosing; Meat In purchasing a quarter of an animal, or pieces from it, we should select such rh have the smallest, thinnest, and fattest hones, covered by the finest grained flesh, with th fat intermixed in thin streaks, or layers, with the lean. This will almost invariably be found tender, juicy, and profitable. On the cons trary meat with large round thick bones of coarse grain, and showing fat in thick slices, or large lumps will prove tough, unsavory, and so far as the profitable part is concerns cd. not worth so much by twenty five per cent, as tha finer boric quality. Poultry which has long, coasc legs, neck and head, ought to bo avoided, while those with short, fine legs long round and plump bodies, and a fine short neck and head, if of a suitable age, should be preferred. These re marks do not apply with the same force to fish, for several kinds of the most bony are very good eats ing. although they may not be as profitable as those with fewer bones The most delicate, however have rather a large number of bones compared with the amount of meat they aflord r for example, the sal mon, bass. cod and mackerel, of the salt water and the Mackinaw trout muscalonge, and white fish of the fresh water. Very large vegetab’es are not usually a3 Jelicato as those of me dium sizeybut to this rule there are many exceptions. As for fruits, the largest arc usually the best. Tho following is said never to fail, if properly applied: make a strong steep, from red oak bark, in hot water, when cold apply as conveneuit, the oftener the bettor. In a few days the wart will dis appear. A farmer should never rest sat isfied no matter how profitable his returns may be from his corn, wheat, sorghum, or field crops, or from breeding and raising stock, if he lacks an orchard and kitchen garden. For the sake of the health and morality oi hi> household, ha should have Nature’s bounteous fruits and flowers to beautify and cheer his wife and children. Chkap Vinegar.— A first rate vinegar may fee made by tho follow ing cheap and simple process. Boil a pint of corn till about half done for three gallons. Put it into jars or jugs, and then fill them with hot water, sweetened with a pint oT syrup perhaps less would do Set them in the sun, and in oue or two weeks.it will be first rate vin egar, No one need buy a poor ar ticle when a good one can be made with so little trouble.—[Journal and Messenger; Molasses Pudding.—Two tea cups of molasses, oue of sugar, o»e tablespoonful of butter, and lluce well beaten eggs. Season to your taste.—Southern Cultivator Beef ; ie.— Cut the cold roast beef, left from a previous incal, into thin slices; lay sonic of tho slices in to a deep pie dish which you have line on the sides with a rich puff paste. Sprinkle over this Twyer a little pepper and salt and a teaspoonful of butter; now a layer of tomatoes: then another lay er of moat, another of seasoning and tomatoes, until ihe dish is fill ed* Cover with paste, and bake an hour. All cold meats are ex cellent prepared iu the same wav. Sweet Potato Custard.— One pound ' potato mashed and sifted fine, half pound sugar, a small cup of cream ana one'fourth pound butter, four eggs, nutmeg aud lem on, to suit the taste.
