Housekeeping.
Beer Patties.—Chop fine, rare
roa6t beef, season with pepper, salt
and a little onion. Make a plain paste
cut into shape like an apple puff, fill
with the mince, and bake quickly.
To Remove Ink from a Carpet.—
Make n paste of arsenic and water,
apply it, wash off and put on more.
Alter three or four applications the
Ink will disappear.
Basing Powder.—Eight ounces
bicarbonate of soda, seven oin cs tar
taric acid, six ounces carbonate of
magnesia, six ounces powdered starch.
Mix thoroughly and put through a
fine sieve.
Plain Pudding.—One pint of milk
jr water, one half-pint of molasses,
one tablespoonlul of salt, one tea-
spoonful of soda, and one pound of
raisiris; t add flour enough to make a
tolerably thick batter., Steam three
hours.
To Clean Tinware.—An experi
enced housekeeper says, the best thing
for cleaning tin-ware is common soda.
Dampen a cloth and dip in soda and
rub the ware briskly, and after which
wipe dry and it will look equal to
new.

This, one of the. largest and wea’lhitst counties
situated near the centre of the state
in Georgia,
being one hundred miles sonth by cast of Atlanta
It contains about 900 square miles or territory,
and farms valued in 1870 at. $2,530,407, while the
total value of farm productions of that year were
$2,250,000,—being of coitou utar 15,000 bales and
of com 363,000 busbels. In productive impor
tance and wealth, excluding all cities, it is the
first in the state. Were it not for its contiguity to
Macon, which it patronizes extensively, it would
support a city of 6,000 inhabitants. The popula
tion is 23,000; climate very healthy with only a
,_ y slight tendency to a mild type of malarial diseases;
soil generousand easily cultivated; people moral
and refined; Of manufacti ries. there are two ex
tensive. establishments,, botliof which are well
conducted and profitable. The eastern border of
the county is washed by the Ocmulgee River, a d
it is traversed by Big Indian, Mossy and. sever* 1
other large creeks which afford excellent water
power.
PERRY,
The capital of the county, is a flourishing' place
situated on Big Indian Creek, a large tributary of
the Ocmulgee River; one of the best water sights
in the state for a large manufacturing concern is

Dear Sir,—When you sent me the fifty saw gin.
you requested-me, when 1 tried her to. let yon
know how I liked her, and according to your
request* I will do so. Yesterday,, afternoon I
timed her. I ginned one hour and thiity minutes
on a pile of cotton that was too damp to be in
real good order. I then packed tlie cotton put
ting yards of bagging on the bale. I then
weighed it and it weighed 514 pounds. I do not
hesitate tc say she is the fastest and picks as
dean as any gin -that I ever saw ginning. I would
exchange her for no 60 saw. gin of any other
make, Magnolia not excepted.

P. S. I weighed seed cotton for one other’
bale, the first one I ginned on your gin last Mon
day afternoon, and it turned out fourteen-pounds
over one-thud—bale weighing467 pounds.

take a little floui, or corn starch
(which is best), well beat into a paste
and thinned, and stir gradually till
the consistency of cream, or as thick
as you like; then add a large table-
spoonful of vinegar or brandy.
Lemon Custard Pie.—For two pies,
mix together the yelks of six eggs (web
beaten) four heaping tablespoorifuls of
white coffee sugar, the rind of three
grated lemons, and about one pint of
milk. Bake in one crust; put on a
frosting made of the. whites of forir
eggs, four tablespoonfnl of white su
gar and the j nice of three lemons;
bake until'the frosting is is a. paie ;
brown.
Pastkx Fob Pies and Tabts.—Take
three cups of sifted flour, one table
spoonful of powdered sugar, one ta
blespoonfnl of salt, one cup of lard
and one and a half cup of cold water;
stir with a spoon, and roll out for
your pies. This is for three pies and
you can enlarge it os you wish. Do
not put your hand to it, nor roll it on
ly to spread it out thin, if yon wish
it short and crispy and not flaky and
tough.
Lemon Pie.—For forir pies—Twelve
eggs whites and yelks, well beaten to
gether put four teacupsfuls and eight
-level tablespoorifuls of white coffee
sugar; rub eight level tablespoonfuls
of sifted flour into one teaenpful of
cold water; add the grated rind and
juice of six large lemons; mix all to
gether and hake immediately in one
crust. For each pie beat until stiff
the whites of three eggs; add two ta-
blespoonfuls of nice sugar; put on
this frosting and bake three minutes.
Tomato Pickles.—Cut the toma
toes in half and let them soak over
night iD salt water. Then scald them
in pure cider vinegar. Be sure they
do not boil, as boilinir makes them
