Useful Recipes.
To Preserve Eggs.—Pack them when
perfectly fresh, in wheat bran, the small
ends down, and so loosely as to prevent
their coining in contact with each other, or
the sides or bottom of the vessel which con
tains them. Cover them carefully with bran,
well pressed down and set them in a cool
place in a cellar, but where they will be ex
empt from frost, aud they will keep for eight
months or a year. Pine saw-dust, well
dried, may be used as a substitute for bran,
and on many accounts is perhaps the bet
ter article ot the two, for this purpose.
Griddle Cakes of Unbolted Wheat.—
One quart ot unbolted wheat, and a tea-
spoonful of saleratus. Wet with water or
sweet milk, in which has been dissolved one
teaspoonful saleratus. Add
fuls ot good molasses, or an equivalent of
brown sugar. Cook in the usual wav.—
some preier Sour milk and saleratus, and
prefer yeast to the latter.
An Excellent Yeast.—Boil a pound of
fine flour, (add a pound of brown sugar aod
little salt,) in two gallons of clear water,
for an hour. Allow it to stand afterwards
till it becomes cool, or about milk warm—
then bottle and cork it close.
To Protect Hams from Flies or Bugs.—

box, and as soon as the hams are thorousjh-
