THK BABCOCK TEST.
The Babcock test is a method for
ascertaining the amount of fat in
milk and milk products. It was de
vised by S. M. Babcock, Ph. D.,
Chief Chemist of the Wisconsin
Agricultural Experiment Station and
first made public in 1890. It is rapid,
inexpensive and accurate nnd has
faund extensive application.
Among the important results
coming from its use are: The pay
ment for milk and cream according
to fat content has been mnde practi
cable; it hns enabled milk producers
to detect unprofitable rows nnd
guided them in Improving their
herds.
The test is based on the action of
sulphuric acid upon the constituents
of milk serum, nnd the action of
centifugel force. The acid acts up
on the milk-serum Rolids (caneln,
sugar, nlumln and salts) in such n
way ns to break them down and lib
erate the fat globules from the form
of an emulsion. T hesc globules
easily run together due to the heat
developed. The separation of the
fat Ir then completed by centrifugal
force. The bottles containing the
mixture of milk nnd acid are whirled
in the Babcock tester at a high rate
of speed and the light fat separates
and appears at the top ns a column
in the graduated neck of the test |
bottle where the percentage is rend
directly.
For illustration, Jersy No. 1 gives
4 gallons or 84.4 pounds of milk per
day th|t tests 6 per cent fat, while
Jersey No. 2 giving the same
amount of milk test* only 4 per cent
fat. The total fat from Jersey No.
1 is 2.0$ pounds per day and that
from Jersey No. 2 is 1.37 pounds,
proving that Jersey No. 1 is the
more valuable cow, other things be-
