Boiled Heart With
Rice and Raisins.—
Wash the heart, remove
cover with boiling wa
ter anil cook ten minutes, then sim
mer very slowly ou ,'the back of the
stove or in a tireless cooker until ten
der. Add washed rice, salt and pep
per. using three-fourths of a cupful of
rice, a tcaspoonful of salt, and one
fourth of a teaspoonful of pepper; cook
until the rice is tender. Drain the
liquor from the rice, add three-fourths
of a cupful of raisins, half a cupful of
walnuts cut in bits, one and one-half
tablespoonfuls of lemon juice, salt and
pepper to taste and bring to the boil
ing point. Place the heart in the cen
ter of a platter, surround with cooked
rice, pour nuts and raisins over the
heart and garnisli with parsley.
Kidney a ia Pon.—Wash one kidney,
remove the tough portions and tubes,
parboil changing the water two or
three times. Drain, roll in seasoned
flour and cook in three tablespoonfuls
of drippings. Remove to a hot platter
and keep'warm. Slice four large on
ions, and cook in this fat, remove
them when yellow to the serving dish.
Add two cupfuls of boiling water to
the fat in the pan and add six cooked
potatoes cut in'thick slices, Wring to
the boiling point, add four tablespoon
fuls of flour mixed with a third of a
cupful of cold water. Stir and cook,
add a teaspoonful of kitchen bouquet,
with salt and pepper to taste. When
the potatoes arc thoroughly heated, re
move them to the platter, reheat the
kidney sauce and pour over the pota
toc: Surround with the onions and
serve at once.
Puree of Peas. —-Cook a pint of ten
der green peas and put through a
sieve; add a tahlespoonful of butter
mixed with two of flour, salt and pep
per to taste. Cook until the flour is
well cooked, add a cup of milk, heat
and whip with adorer egg beater,
then serve at once. If there are more

To Pump Out Flaming Oil,
A recent fire in which a half-barrel
tank of til proved :l stumbling block
to the firemen and eventually led to
tho destruction of a building suggested
to me, writes a correspondent, that
a suction pump with a long nozzle
could be mounted on a two-wheel truck
and used to draw such burning liquid
out of a building. One operator could
hold the nozzle of the pump down in
Wie oil while the others pumped the
fluid out through a hose into the gut
ter.
