I have been asked several
questions about last week’s
recipe-yeast rolls. Their
lightness is due to a
minimum of handling; there
fore, don’t knead the dough.
When the dough has doubled
in bulk, then oil a baking
sheet and oil your hands and
shape the dough into rolls. If
you like, you can let them
rise another 30 minutes
before baking on the baking
sheet. This is an easy way to
please your family and
guests with homemade rolls.
This week’s recipe is for
chocolate lovers from a
chocolate baker specialist,
Paul Fleischer. This is his
“many times tried’’ Brownie
recipe. It is the very best
brownie recipe, and easy,
too. One of his techniques is
to mix the ingredients by
hand, rather than using a
mixer. The pan size is very
important. Use a 9 X 13 for
best results.
DELUXE BROWNIES
4 ounces unsweetened choco
late
2 cups sugar
4 eggs
dash salt
>2 cup nuts (if desired)
4 ounces butter or margarine
1 cup plain flour
4 teaspoon baking powder
1 teaspoon vanilla
Melt chocolate and butter
over low heat. Meanwhile,
mix remaining ingredients.
Add melted butter-chocolate
mixture and mix well. Pour
batter into a 9 X 13 greased
pan and bake at 350 degrees
for 30 to 35 minutes. Let cool
before cutting.

Fast Refunds
Taxpayers who file their
returns in early February
can expect any refund due in
four to five weeks or roughly
half the time late filers will
have to wait, John Hender
son, IRS District Director for
Georgia said.
In urging taxpayers to file
early, Henderson said that
individuals who delay filing
until late March or April-the
peak filing time-may have to
wait for their refunds as long
as 10 weeks.
Another advantage to filing
early, according to the
Georgia District Director is
avoidance of careless errors
often made by last-minute
filers who are rushed.
These errors-which fre
quently involve incorrect
arithmetic, use of the wrong
tax table, or failure to sign
the return-can further delay
processing of the return as
well as the refund check.
Henderson said that tax
payers should begin now to
gather their records, such as
receipts or cancelled checks,
to substantiate itemized
medical deductions, charit
able contributions, and
others. With records in order,
Henderson added, taxpayers
can begin to fill out their
returns as soon as they get
their earnings statements
(Forms W-2 and 1099).
Last Year, 1,754,668 tax
payers in Georgia received
an average refund of $394.32.
