Hints for Homemakers

The Good Egg
Eggs’ are a good source of
high, quality protein, iron and
vitamin A. This makes them
a valuable part of a good nu
trition program. But eggs do
a lot for the homemaker in
terms of food preparation.
Some of the secrets of good
cooking, for example, are re
sults of the physical proper
ties of eggs. For instance, egg
binds oil and vinegar together
in mayonnaise and it binds
solids together in meat loaves
and croquettes. The lightness
of cakes and meringues is due
to the fact that the protein
of eggs can encase air when
whipped. Because the protein
of eggs coagulate when heat
ed, the liquids with which
they are mixed thicken and
you can make a custard.
If you want to witness some
of these qualities of eggs, try
meringue shells filled with
fresh or frozen fruits such as
strawberries or Deaches. Ice
cream is a good filling, too. In
any case, you’ll find meringue
shells to be a delicious des
sert.

Meringue Shells
4 egg whites; 1,2 teaspoon
cream of tartar, 1 teaspoon
vanilla, 1 cup sugar.
Beat egg white until foamy.
Add cream of tartar and beat
until stiff. Add sugar, two ta
blespoons at a time, beating
each time until sugar is blend
ed. When all sugar has been
added beat until meringue wiill
stand in very stiff peaks.
Cover a baking sheet with
unglazed paper. With a spoon,
shape mounds of meringue a
bout three inches in diameter
and one and one-half inches
high. Make a depression in
the center of each. Bake in a
slow oven 275 degrees for 45
to 50 minutes or delicately
brown and dry on the surface.
Remove from paper. Store in
air-tight container
