sclous of a sort of spiritual sunshine
which cheers him up and sends him
on his way In a lighter mood, better
equipped to solve his own perplexities.

to seek the cause of Ibis pleasurable
sensation, the effect of which tingles
his nerves and makes of him tempo
rarily a better being.
The secret of this experience Is that
the wrinkled old woman has an ugree
able personality, a treasure which
money cannot buy, gleaming in the
darkest days like a priceless gem In
the sunshine, and sending Its cheer
ing rays down to the somber recesses
of the heart.
Wealth, talent, power and pomp
stop, stoop and dnIT their hats to the
man or woman of an amiable individ
uality, not knowing perhaps why they
do so, hut keenly sensible all the
while of receiving something In return
for which their souls are starving.
And so It Is with the world at large,
culling today for young men and wom
en to till the high places, which are
always open for those fortunate per
sons whom the gods have blessed with
a pleasing personality, which for a
better term my he called the essen
tial quality of leadership In all the
walks of human enterprise.

SEASONABLE GOOD THINGS
A MOST wholesome and economical
dish Is prepared front the follow
ing: Wash one half pound of dried
pens and hull 111 three pints of water.
Add a ham shank weighing about two
pounds, or less; hoi| three minutes,
then simmer one and one half hours.
Ihtnove the shank before the meat
falls from the hones and reserve for
Westphalia roll. Put through a tine
sieve and serve the puree with bread
cut Into cubes and fried In the fat cut
from the hum shank.
Westphalia Roll.
Remove the rind front file ham
shank and try It out. ('hop the meat,
season with any desired seasoning.
Add one and cue-third cupfuls of boil
ing water to one pound of continual,
one-half teaspoonful of suit; mix and
spread on a cloth 18 Inches square,
leaving a margin at ends and sides of
two Inches. Place the ground ham In
the center and fold over the cloth so
that the moat Is completely covered.
Fold and place, the folded end down. In
a colander. Steam for two hours and
serve hot. Corn husks may be substi
tuted for the cloth when they are avail
able. Season highly with cayenne and
the dish w ill he u huiu tamale.
Creole Sauce.
Mince fine fliroe onions, one green
pepper, one red pepper, one-half cup
All of stewed tomatoes, two tablespoon
fuls of tomato catsup anj one table
spoonful of Worcestershire sauce. Cook
gently for ten minutes, rub through a
sieve, season and serve.
Tomato 6oup.
Cook one tnblespoonful of rice In ■
three cupfuls of boiling water, until ]
tender; to this add two cupfuls of
strained tomatoes, one teaspoonful of
onion juice, snlt, pepper to taste, and
cook fifteen minutes longer. Serve with
croutons of bread.
Potatoes au Gratln.
Chop potatoes ciniked In their jack
ets and peeled. Put a layer into a
buttered baking dish, cover with a !
layer of well-seasoned white sauce; |
add a tablespoonful of grated cht>ese 1
and repeat with another layer of each.
Cover with buttered crumbs and hake
until the crumbs are well browned, j
Serve hot.
