Summer, the season of the year
when every housewife takes ’pride
in serving her own made ice cream,
ices, cakes, deserts, and other pas
tries, being near we wonder how
ninny of our renders know that the
Mexican Vanilla Bean constitutes
the most important factor in the
manufacture of Vanilla Extract,
whicn adds so muen to the taste
and tlavor of these delicacies.
The Vanilla plant is an orchid,
having roots in the air as well as
in t he ground. ■ It clings to trees
or frames twining around thorn as
it grows, and favors most a light,
loose soil, well drained with “quilt
ed sunshincand leaf shade,” a con
dition naturally brought about by
the foliage of the protecting trees.
The finest grade Vanilla Bean is
grown in Tapantla, Mexico, about
375 miles North of Vj*ra Cruz. The
average Vanilla Bean is 7 to 8 1-2
inches in length and 3-8- to 1-2
inch in thickness before cured. It
very juicy, round, contains
thousands of little black seeds and
of a green'color; after being thor
oughly cured it assumes a brownish
color. To bring out the rich aro
matic and delicious flavor of Vanil
la Beans the process of manufact
ure employed takes from two to
three .years from the time the Bean
is macerated'or soaked until the
Extract is bottled.
