Chow-Chow.—Chop fine one peek green
tomatoes, three onions anil three pep
pers and boil three minutes and drain.
Then tdke two cups of sugar, two quarts
vinegar, one-half cup mustard and
tablespoonful of cloves, two of cinnamon
and three of salt; heat all together
and pour on.
Cold Catsup.—One peek ripe toma
toes peeled and drained over night.
One small teacupful of salt, two table-
spoonfuls black pepper, two horserad
ish roots, two tablespoonfuls of celery
seed, one cupful of chopped onion, one
tablespoonful each of cloves and cinna
mon, one cup of mustard seed and two
red peppers.
.Spiced Cherries.—To four pounds of
sugar allow one pint of vinegar and
spices according to taste; dissolve the
sugar in the vinegar and heat till boil
ing, then pour it on the cherries and
let stand three or four days. Then
scald the juice and cherries together
and again let them stand three or four
days, after which boil down the juice
alone until there is just enough to
cover the cherries.
Marmalades.—Cut into pieces ripe
and luscious fruit and place with sugar
in layers in the preserving kettle, put
ting fruit in the bottom and allowing
three-quarters of a pound of sugar to
a pound of fruit. If the fruit is not
juicy enough add water and stir fre
quently with a wooden spoon to pre
vent burning. When done it will look
clear and glossy, and a portion set^
cool in a saucer will thicken.—Farm,
