Poinsettias Bring Holiday Decorations to Life

Poinsettias embody the holi
day spirit and help create the
most festive displays. The chal
lenge is deciding how many
poinsettias to buy, what color,
leaf shape, plant size and form.
These holiday classics offer tra
ditional red, strong white,
creamy white, light pink, solid
pink, bright orange-red, deep
purple-red and various marbled
or speckled flowers.
They come in sizes from 4
inch pots for table displays to
18 inch hanging baskets, living
wreaths, topiaries and 3 gallon
floor planters. Poinsettias are
versatile. Besides using them
simply as potted plants, you can
use stems as cut flowers in ar
rangements. Just be sure to
keep cut stems in water. Some
cultivars can last up to two
weeks as cut flowers.
Despite persistent rumors to
the contrary, poinsettias are
nonpoisonous and safe around
children and pets. Buying the

bine them in any way, and they
will make the season most joy
ful. Open your house to family
and friends and enjoy with them
an array of mouth-watering
dishes.
Country Ham
1 (10-lb.) sugar-cured country ham
1 (16-oz.) pkg. light brown sugar
Whole cloves
14 cup mint jelly
1 can peach halves, drained
4 to 5 maraschino cherries, halves
Curlyendive lettuce
Scrub ham thoroughly with a
stiff brush; do not soak. Pour
water to IV2 inch depth in a
large roasting pan. Place ham,
skin side down, in roaster; coat
exposed portion generously
with brown sugar. Cover and
bake at 350 degrees for 2 hours
and 20 minutes, basting with
pan juices every 20 to 30 min
utes. Carefully remove ham
from water; remove skin. Place
ham, fat side up, on a cutting
board; score fat in a diamond
design, and stud with cloves.
Return ham to roaster, fat side
up; coat top generously with
brown sugar. Continue baking,
uncovered, for 1 hour, basting
occasionally. Spoon mint jelly
evenly in peach halves and top
with cherry halves. Arrange
ham on platter on a bed of let
tuce. Garnish platter with peach

low these tips.
You should look for fully col
ored and expanded bracts.
Avoid plants with too much
green around the bract edges.
This is a sign that the plant was
shipped before it was mature
enough.
You should choose plants
with dense, rich green leaves
all along the stem. Poinsettias
should be well branched and
proportioned with the con
tainer, about two and a half
times the height of the pot.
Check the leaves for insect
damage. One common pest on
poinsettias is the silverleaf
whitefly. These tiny flies live
on the underside of the leaves,
sucking the juices. This is the
giveaway.
White and light tan roots that
have grown to the sides of the
pot are signs of a healthy plant.
Brown roots, or few roots, may
be a sign of disease. Don’t buy
plants with weak stems, few
bracts or any signs of wilting,
halves.
Buttermilk Biscuits
4 cups all-purpose flour
2 TBSP baking powder
1 tsp. soda
% tsp. salt
1 TBSP sugar
1/3 cup margarine, softened
P/2 cups buttermilk
14 cup margarine, melted
Combine flour, baking pow
der, soda, salt, and sugar; cut in
1/3 cup margarine until mixture
resembles coarse meal. Add
buttermilk, stirring until dry in
gredients are moistened. Turn
dough out on a lightly floured
surface; knead lightly 4 or 5
times. Roll dough to VYinch
thickness; cut with a 2-inch bis
cuit cutter. Place biscuits on a
lightly greased baking sheet;
brush tops with melted marga
rine. Bake at 450 degrees for 8
minutes or until golden brown.
Yield: 40 biscuits
Creamy, Dreamy, Spinach,
Onion and Bacon Dip
1 lb. bacon, cooked and crumbled
1 (10 oz.) pkg. frozen chopped
spinach thawed and squeezed dry
10 oz. chipped onion
2 (8 ounce) pkgs. cream cheese
softened
1 (5 oz.) pkg. shredded parmesan
cheese
1 cup shredded mozzarella cheese
Garlic and/or seasoned salt to taste
Corn chips
Combine all ingredients (ex
cept corn chips) in a medium
bowl. Spoon mixture into a 2-
quart baking dish. Bake 30 min-

tias are often crowded in stores,
sometime in paper, plastic or
mesh sleeves, but they need
their space. The longer they re
main sleeved, the faster their
quality deteriorates.
When you buy plants and
take them home, protect them
from chilling winds and tem
peratures below 50 degrees.
You may need to place it into a
sleeve or a large shopping bag.
Once they’re home, place the
poinsettias wherever your
decoration plan calls for them.
They’ll last about three weeks
in fairly dark places. Don’t put
them near cold drafts or exces
sive heat or near appliances,
fireplaces or ventilating ducts.
Water poinsettias only when
the soil feels dry to the touch.
If you let them wilt the leaves
could drop off. Overwatering is
a common cause for poinsettias
dying. Always remove a plant
from any decorative container
before watering and let the wa
ter drain completely.

3 cups apple juice or apple cider

21/2 cups pineapple juice
2 sticks cinnamon
2 cups cranberry juice

In coffee percolator mix
juices, brown sugar and salt. In
basket place cinnamon, cloves
and allspice. Plug in coffee pot
and urn through cycle. Serves

Holiday Fruitcake
2 eggs
2 cups water
2 pkgs. Pillsbury date or nut quick
bread mix
2 cups chopped pecans
2 cups raisins
2 cups candied cherries
1 cup candied pineapple, cut up
Heat oven to 350 degrees.
Grease and flour bottom and
sides of a 12-cup fluted tube pan
or 10-inch tube (angel food)
pan. In large bowl, combine
eggs and water. Add remaining
ingredients; by hand, stir until
combined. Pour into prepared
pan. Bake at 350 degrees for 75
to 85 minutes; loosen edges and
remove from pan. Cool com
pletely. To store, wrap tightly in
foil or plastic wrap; place in re
frigerator. If desired, glaze with
warm com syrup; decorate with
candied fruit and nuts.
