Cocoa is pure chocolate with
about three-quarters of the cocoa
butter removed. Cocoa is conve
nient. You can store it almost in
definitely on your kitchen shelf
with no loss of quality or change
in appearance, even after the can
has been opened. A completely
natural food with no additives or
preservatives; it is used in recipes
for cakes, desserts, cookies, can
dies, pies, frostings, and bever
ages. I hope you enjoy these reci
pes using cocoa.
Hot Cocoa Mocha
Vt cup sugar
2TBSPcocoa
2TBSPwater
1 cup whipping cream
114 to 2 cups hot coffee
Stir together sugar and cocoa in
microwave-safe 2 cup measure.
Add water; stir until well blended.
Microwave at HIGH (100%) 30
to 45 seconds or until mixture
boils. Add whipping cream; stir
until well blended. Microwave at
HIGH 1 to O/2 minutes or until hot.
Combine cocoa mixture and cof
fee. Serve immediately. Makes 3
to 4 servings.
German Chocolate Cake
14 cup cocoa
1/2 cup boiling water
1 cup plus 3TBSP butter or margarine,
softened
214 cups sugar
1 tsp. vanilla extract
4 eggs
2 cups all-purpose flour
1 tsp. baking soda
V2 tsp. salt
1 cup buttermilk
Coconut Pecan Frosting
Pecan halves (optional)
Heat oven to 350°F. Grease and
flour three 9-inch round baking
pans. Stir together cocoa and wa
ter in small bowl until smooth; set
aside. Beat butter, sugar and va
nilla in large bowl until light and
fluffy. Add eggs, one at a time,
beating well after each addition.
Stir together flour, baking soda and
salt; add to butter mixture alter
nately with chocolate mixture and
buttermilk, beating just enough to
blend. Pour batter into prepared
pans. Bake 25 to 30 minutes or
until top springs back when
touched lightly. Cool 5 minutes;
remove from pans to wire racks.
Cool completely. Prepare Coconut
Pecan Frosting; spread between
layers and over top. Serves 10 to
12.
Coconut Pecan Frosting
1 can (14 oz.) sweetened condensed
milk (not evaporated milk)
3 egg yolks, slightly beaten
14 cup (1 stick) butter or margarine
1 tsp. vanilla extract
11/3 cups coconut
1 cup chopped pecans
Stir together sweetened con
densed milk, egg yolks and butter
in medium saucepan. Cook over
low heat, stirring constantly, until
mixture is thickened and bubbly.
Remove from heat; stir in vanilla,
coconut and pecans. Cool to room
temperature. Makes about 2T!
cups frosting.
Chocolate Cream Pie
1 baked 9-inch pie crust, cooled
14 cup cocoa
114 cups sugar
1/3 cup cornstarch
14 tsp. salt
3 cups milk
3 TBSP butter or margarine
V/2 tsp. vanilla extract
Sweetened whipped cream
Prepare crust. Combine cocoa,
sugar, cornstarch and salt in me
dium saucepan. Gradually add
milk to dry ingredients, stirring
until smooth. Cook over medium
heat, Stirling constantly, until mix
ture comes to a boil; boil 1 minute.
Remove from heat; stir in butter
and vanilla. Pour into prepared
crust. Carefully press plastic wrap
directly onto pie filling. Cool; re
frigerate 6 to 8 hours. Top with
whipped cream. Cover; refriger
ate leftover pie. Makes 6 to 8 serv
ings.
Chocolate Cookies
114 cups softened butter
2 cups sugar
2 eggs
2 tsp. vanilla
2 cups flour
% cup cocoa
1 tsp. baking soda
14 tsp. salt
2 cups chocolate chips (or peanut butter
or white chips)
Heat oven to 350 degrees.
Cream together butter, sugar, eggs
and vanilla until light and fluffy.
In separate bowl, mix thoroughly
flour, cocoa, soda and salt. Add
both mixtures together and mix
thoroughly. Add chips. Drop by
rounded teaspoonfuls onto cookie
sheet. Bake until done - do not
overbake. Cookies will flatten
when removed from oven and are
chewy.
