down from Tammy Banks on
what it’s like cooking at Boss
Hog and how she and her
teammates got started in com
petitive barbecuing. She also
shared some winning recipes
that are equal parts of easy
and tasty.

Day job: Program manager for CSB of Middle Georgia, Burke County Service Center
BBQ team name: Big “J” and the Butts — members include Tammy and her husband,
James; their daughters, Mandi and Savanna and sons-in law, Billy and Raul; and Tammy’s
cousin Charles Marshall and his family, Amy and Abby.
Where did y’all come up with a name like that? James is a big man, and we were all
his helpers. He called us women “butts” so that's where Big "J" and the Butts came from
and we’re the butts.
When did you first discover your love for barbecue?We've always cooked for family
events, and when our oldest daughter, Mandi, went to high school she was in the band. We
started barbecuing for the band for events and stuff and then we heard about the Boss Hog
competition. We decided to try it, and we've been doing them ever since.
Why compete? To be honest because my husband loves it, and I have to help him. We
have met some really great people and great friends!
What is the Boss Hog experience like? It's our hometown and we love it! We're local so
it's kind of exciting for us to be able to cook right here at home, and it's honestly one of the
best and most fun events we've attended and competed in.
Who taught you how to cook? My Daddy and Mama and my husband James. We love
to eat!
How had your barbecue measured up in previous contests? We've won first place ribs
at Boss Hog before as well as King of the Wing. We've won Anything Strawberry four times
at Boss Hog. Second place ribs in Lyons, third place chicken at Banjo-B-Que, and first place
ribs at Racks by the Tracks several times.

-1 box Duncan Hines butter recipe cake mix
Fix cake according to recipe on the box. You can make two or four layers.
(I make it four.)
Icing:
-1 large tub of Cool Whip
-16 ounces sour cream
-1 cup sugar
-2 packages frozen coconut
*if you make four layers, just double the icing recipe)

STUFFED PORK TENDERLOIN
Take a medium-sized pork loin dieted out where it's about a half
inch thick on each side. Layer with sliced pepperoni, pepper jack
cheese and ham and roll it back up and wrap with bacon. You may
have to put toothpicks in to hold your bacon down. Smoke it on
325 until internal temperature is 165 and your bacon is golden
brown. (We won third place with this recipe at a competition in
Greenwood!)

WPD officers honored during National Police Week
In honor of National Police Week and to show appreciation to the Waynesboro Police Depart
ment officers, Chief James “Willie” Burley held an awards ceremony and appreciation day where
officers received gift cards from local businesses and others, thanks to several donations and
the Chamber. Chief Burley said, “I love being the chief in Waynesboro because we have such
great employees and citizens that are always working together for the betterment of the com
munity.” Mayor Greg Carswell is having a proclamation drawn up for today (Wednesday) at the
public safety committee meeting honoring the police officers for their dedicated service. “We
have a great police department, and we are striving to become better each and every day,”
Carswell said. Special honors included Excellent Duty Awards: Officer Hernandez, Officer Harris,
Investigator Whittington, Investigator McDaniel, CpI. Erik Napier, CpI. Jenkins, Sgt. Pritchett,
Communications Supervisor Naise Gordon; Municipal Court Clerk Reeves and Administrative
Assistant Tucker.; Meritorious Service Award, Officer Hernandez, Investigator Whittington and
Communications Supervisor Naise Gordon; Supervisor of the Year, Lt. Rodriguez; and Officer
of the Year, Officer Green.
