BRUSHY CREEK
Needs to be Bridged—a Sug
gestion to Grand Jury.
It is but two weeks before
the sitting of our court, and
we hope among other things,
that the gra id jury will take
into consideration the build
ing of a bridge across Brushy
creek on the Aftjens road,
near the Ware place. This
ereek is so filled up that it
has spread out all the bot
toms, making it impossible
to keep it in passable condi
tion.
A bridge at this place is
needed badly and would be a
great convenience to the
traveling public,* and we
hope they will reccommend
that it be built.

Question. —Will you be so kind aa to
give me the beet method ol pickling
beef? Also iufonn me of the best way
to save pork. I expect to kill 80 fat
hoes.
Answer. —There are soveral good re
ceipt* for pickling beef. The following
is simple and will give s.vtlsfaction: Cut
up your beef in pieoe* to suit, rub well
w|th salt and pack tightly, or rather
closely,, iu a barrel or cask two days be
fore patting in pickle. This draws out
the blood and the. meat mast be taken
out of this first vossil and washed be
fore packing for pickling. Tlioa paok
in a clean oak or cypress barrel aa
closely as possible, and when the barrel
is nearly full pour over the meat a brino
made as follows: To 4 gallons of water
add 7 pounds of salt, 3q: ounces of salt
petre and lie pounds of granulated su
gar, boil, strata with carp and let it bo
perfeqeiv cold before p taring it uu the
meat. Then put a weight oq the moat
to keep it down below the surface of the
brlna, lu a few weeks the beef will bo
ready for use.
The same mothoii inny be pur
sued lu curing hams and shoulders
of hugs. If then you wish to smoke
your ham* and sliouliloM take them
out of the pieklo in . five weeks,
wipe dry and hang up for a day
ot- two before smoking. Then smoke
with com Ciift*. or hickory wood fora
week or ten days, taking care that the
meat does not get hot while being
smoked. After smoking, dtp the hams
and shoulders for ilo seconds in boiling
water, to destroy nay eggs that the flies
may havo deposited ou them; then wipe
dry and wrap them iu sweet, well oared
hay, and slip them Ist cheap sacks of
any kind that have no holes in Atera.
1 Lastly tie up And hang iu a cool place.
Hams thus troatod Will be good at all
tjpes, and best after hanging up for 13
..months.- Tne sides and hoods may be
ptfckled in tiie same way, and then
Smoked or hot as you prefer. Here is
another receipt for those -who like splco
flavored moats: For every 100 pounds
of meat take 8 pounds salty 8 pounds of
browu sugar (or 1 quiM of molasses), 2
ouucos of saltpetre. 2V4 ounces of doves
and ounces of bluck pepper. Put
these in sufficient water to cover the
moat when pocked, and boll and skim
carefully; when perfectly cold, pour
ever the moat, that has been packed iu
a barrel or cask, keeping the meat
weighed down below the brine. Of
course the meat tn bo thus pioklod
should be w<*ll rubbed with suit and
packed, for two days before plckbug, in
order to draw out the bln id. Thou tukn
up and waeh before pckling. There
is no troublo lu saving the side moat;
either, cut up and pickle us above, or rah
well and pack iu boxes, putting plenty
of salt ou each layer of meat us you pock
it If you desire to smoke the sides,
! take them out of the salt-in five weeks,
• and treat them as you do the shoulders.
If you cannot get the oidfushioned
coarse salt, increase the quantities re
commended at least 18 per cent Maoh
pork is lost tn Georgia every year, es
pecially in tho sow, horn portion of the
state, by trying to cure it by the dry
saltod method, and again much is lost
by allowing it tj got bouto.l wiitlo smok
ing. By pickling and caro in smoking
none should ever bo lost. —Stats Agri
