ket; there are also those which are indif
ferent. had and very bad. The latter
are the more common,” remarked a

originally came. If carefully kept they

tronomic standpoint, the best vinegar is
that which is made from red wine; next
to it are those made from white wine,
cider and perry. The first is invaluable
in salad A essing on account of its beauti
ful color; tlio second is most useful in
those preparations where no color at all
is desired; the third is available for all
general use, and the last conies to the
front whenever the delicious jargonelle
flavor is conducive to tlio culinary suc
cess.
“Below this first class are the vinegars
made from ale, beer and whisky. These
are coarse, heavy and often offensive.
They never, except in the case of whisky,
aro made purposely, hut represent the
doire of some brewer or distiller to
utilize goods which liavo been ruined by
careless treatment and which Would
otherwise prove a total loss. The ale
that sours in the barrels and hogsheads,
the I leer that begins to putrefy in the
vaul.s and the wretched whisky winch
is so full of fusil oils that no dealer, not
even the lowest, will purchase it at any
price, aro the raw materials from which
this class of vinegars is made. They
cannot be said to be injurious, hut they
are simply miserable apologies for the

every respect, are the vinegars made in
the laboratory by chemical processes and
especially by the destructive distillation
of wood. Unless skillfully refined and
purified they contain creosote, wood tar
and other products of the same class, all
of which are injurious, many of which
are poisonous and some of which are
fatal to the user. They have one ad
vantage, and only one—they nro cheap.
They bear the same relation to genuine
vinegar that myrbano oil docs to bitter
almonds, glucose to pure sugar, sweet
ened dilute oil of vitriol"to lemonade and
lard oleomargarine to fresli creamery

the centipede. The latter, however, al

he removes the cactus and ventures
