Poultry proilts ofteu depend largely

whore, nml when to dispose of Ills
products to tile best advantage. It
often pays to dress the fowl at home
for certain markets, the difference be
tween Hie prices for live and dressed
fowl making it worth while.
Attractive appearance is of much
importance iu selling poultry; there
fore, the producer who plans to market
his poultry dressed should study tin*
detuils of killing, dressing and packing.
In order to prepnre the products in
tlio best possible manner. Require
ments for dressing and packing vary
somewhat In different markets, and H
will pay tlio producer to learn any
special demands of the distributing
poiut to which he Intends shipping.
Killing, Dressing, and Packing.
The birds should lie kept without
feed from 18 to 2-1 hours before killing,
unless they are to be drawn, special
ists of the United States Department
>f Agriculture say. In tin* latter case
they should have no feed for at lea'
ll) hours before killing. When ready
to kill, suspend the fowl by the leg-
and, using a knife, cut the vein at tin*
buck of the throat through the mouth.
As soon as this vein is cut run the
point of the knife through the roof oi
the mouth into the brain, which
causes tlie bird to lose all sense of
feeling. The fowl can he paralyzed
also by a blow on the head, Instead of
piercing tin* brain.
In most markets dry-picked birds
are preferred. Immediately after kill
ing, while tin* bird is still bleeding,
the picker removes the feathers, being
careful not to tear the skin. If tlio
picker waits until (In* bird is nearly
treatment to develop them into ■; i 1
