Such a chef Is llaroutoun Gadojlan,
sometime chef to the family royal of
the kliedlre of Kgypt. now the owner
of a bizarre gold coast restaurant In
Chicago. In Ids forty-three years as a
chef extraordinaire, Ilaroutoun's word
has been law In the cuisines of three
Kgyptian princes and one princess,
the mother of the khedlre. When
Lord Kitchener was wlrdar of Egypt,
before tli?? trouble In the Soudan,
llnroutolin rooked for him.
One of Kitchener's favorite dishes,
according to llaroutoun, was schlsch
kalili, a dish made from milk-fed baby
Iamb. Prlwe Jninlel, another of Ids
masters, was particularly fond ol

which Is one of Ilaroutoun's zealously

flour, butter and nuts.
In many of Ids admirable" dishes,
llaroutoun uses evaporated milk,
which Is simply fresh cow's milk
sterilized In cans and with sixty per
cent of the water removed. Itecause
of a homo: enizing process through
which evaporated milk Is put, the
fat globules in the milk are broken
up Into microscopic particles and dis
tributed throughout the milk, where
they remain In homogeneous suspen- 1
slon.
This breaking of the fat globules
gives a d: t tu t buttery tlavor to every
drop of 'lie evaporated product, it
flavor which ordinary market milk
